Swiss Meringue
Meringue suisse · A stable, dense, silky meringue made by heating egg whites and sugar together over a bain-marie to 70–71 °C (160 °F) before whipping. The heat dissolves the sugar completely, pasteurizes the whites, and partially denatures the proteins, producing a glossy, firm, pipeable foam that holds its shape without a blowtorch crust. It is the structural backbone of lemon curd fillings, buttercream bases, and baked Alaska.

The formula
2 parts sugar : 1 part egg white (by weight)
The classic French ratio of 2 parts sugar to 1 part egg white (by weight) is standard for Swiss meringue. This yields a stable, dense foam; more sugar makes it sweeter and glossier, while less sugar can produce a slightly less stable result. Adjust to taste for specific applications.

Ingredients

Method
- 1Combine egg whites and sugar in a perfectly clean, grease‑free bowl (metal or glass) set over a bain‑marie. Stir gently with a flexible spatula.The water bath provides controlled, even heat that dissolves the sugar and denatures egg‑white proteins without scorching.
- 2Heat to 70–71 °C (160 °F), stirring constantly. The mixture should feel very hot and appear slightly frothy; sugar must be fully dissolved — rub a little between your fingers, it should feel completely smooth.71 °C is the minimum pasteurisation temperature for egg whites and the point at which sugar dissolution is complete. Below this, crystals remain; above, albumen toughens and the foam becomes rubbery.
- 3Transfer immediately to a stand mixer (or continue with a hand mixer). Whip at medium speed until the mixture is opaque, holds soft peaks, and has cooled to roughly 35–40 °C.Cooling below 40 °C prevents added butter or delicate flavourings from melting and allows proteins to re‑coagulate into a stable, elastic network.
- 4Increase to high speed and whip to stiff, glossy peaks — the meringue should hold its shape completely, with no slumping, and appear smooth like marshmallow.Stiff peaks indicate a fully expanded protein matrix that has entrapped air. Gloss indicates proper protein alignment from correct heat exposure.
- 5Use immediately, or store (see storage). For SMBC: cool whites to below 25 °C, then add softened butter (227 g per 120 g whites) in small pieces, whipping continuously until silky.Butter is incorporated into the already‑stable meringue matrix, creating a water‑in‑fat‑in‑water double emulsion; the protein film around the air cells migrates to coat fat droplets, stabilising the whole system.
Techniques that matter
Bain‑marie heating
Provides gentle, even indirect heat essential for dissolving sugar in the whites without cooking the albumen. Direct heat creates hot spots that partially coagulate proteins, reducing foam volume and creating an uneven texture.
Sugar dissolution check
The definitive quality test: the hot mixture must be completely free of grit. Any remaining crystals will seed uncontrolled crystallisation, producing a grainy, weeping meringue.
Whipping to stiffness
Swiss meringue is whipped further than French meringue. Stiff peaks create a dense, cut‑table structure ideal for piping and layering — it does not rely on a blowtorch crust for stability.
Temperature‑controlled butter addition (for SMBC)
Butter must be near body temperature (18–21 °C) when incorporated into cooled meringue; cold butter fractures the foam, hot butter melts it. The sequence — cool whites first, then warm butter — is non‑negotiable.
Variations & derivatives
Swiss Meringue Buttercream (SMBC)Universal
The most important derivative: 120 g whites + 240 g sugar cooked to 71 °C, whipped cool, then 340–400 g soft butter incorporated. Vanilla, lemon, or chocolate may be folded in. The gold‑standard stable buttercream for birthday cakes and pastry filling.
Meringue kisses (piped and baked)Universal
Piped and baked at 100 °C (210 °F) for 60–90 minutes until completely dry. The Swiss method tolerates oven baking better than French because the pre‑cooked proteins set more firmly.

Swiss meringue spread on a foil‑lined bowl, baked to set, then unmoulded and immediately surrounded by ice‑cream and wrapped in a second meringue layer before torching.
Pavlova (Swiss‑style)Australia / New Zealand / competition pastry
Some practitioners use Swiss meringue as the base for pavlova, cooking the whites first for improved stability and reduced weeping under heavy toppings.

Substitutions
- Fine white sugar → Superfine/caster sugar — Preferred over standard granulated. Regular granulated requires longer bain‑marie time and risks incomplete dissolution.
- Egg whites → Cartoned pasteurised liquid whites — Convenient and guaranteed clean. Use weight (60 g ≈ 2 oz liquid white). Slightly more moisture may require a 5–10 % reduction in liquid if the mixture seems loose.
- Bain‑marie cooking → Direct cooking in a copper or steel bowl over low flame — Possible for experienced cooks but risks uneven heat and local protein coagulation. Not recommended for the novice. The bain‑marie is the defining safety mechanism of Swiss meringue.changes result
- Cream of tartar → Lemon juice (2–3 drops) — Provides acidity to stabilise foam and brighten colour. Added after cooking, same quantity. Does not replicate cream of tartar’s specific effect on whitening.
Troubleshooting
Weeping — syrup pools beneath the meringue after standing
Undissolved sugar crystals acting as nucleation sites for liquid migration, or too much sugar for the egg‑white protein to bind → Ensure the whites‑sugar mixture reached 71 °C and feels completely smooth. Verify weighing precision. If the batch is already weeping, remix by gently heating 2–3 spoonfuls with a drop of water, dissolving fully, and folding back in.
Grainy texture — visible sugar crystals
Insufficient cooking time in the bain‑marie, using coarse granulated sugar, or introducing fat (a dirty bowl) that inhibits full dissolution → Reheat the whole batch to 71 °C with 1–2 tablespoons of water, stirring until smooth. Cool and re‑whip. In future, use caster/superfine sugar and a scrupulously clean bowl.
Foam collapses or stays soft — won’t build to stiff peaks
Fat contamination from yolk residue, grease on equipment, or adding butter/extract too early; also possible from overheating (>77 °C) which denatures proteins beyond the recoverable range → Start fresh with a perfectly clean bowl. If overheating is suspected, the proteins cannot be rescued — begin again at the correct temperature.
SMBC turns grainy or ‘cuts’ when butter is added
Butter is too cold (hard lumps) or too warm (melts the foam); or butter is added too quickly, overwhelming the protein matrix → Ensure butter is 18–21 °C (soft but holds its shape). Add one tablespoon at a time, whipping thoroughly between each addition. If it cuts, briefly warm the bowl’s outside surface with a heat gun or warm water bath while continuing to whip — this re‑emulsifies the mixture.
