The formula

1 part sugar : 1 part water (by weight)

1:1 ratio by weight. Mass is conserved during dissolution (200g + 200g = 400g total); volume is approximately 380–385 mL due to partial volume displacement when sugar crystals integrate into the water matrix. For cocktails, 2:1 'rich' vanilla syrup is also used, but the classical Foundation is 1:1.

Method

  1. 1Combine sugar and water in a non-reactive saucepan (stainless steel or enamel). Do not stir once boiling begins.Sugar dissolves completely at 100°C; stirring introduces air bubbles and can cause premature crystallization by promoting seed crystal formation.
  2. 2Heat over medium-high, stirring gently just until sugar fully dissolves and liquid reaches a full boil.Full boil indicates saturation point reached; dissolve time must be brief to minimize water loss through evaporation and concentrate the syrup.
  3. 3Remove from heat immediately. Add split vanilla bean, submerging it completely. Cover the saucepan.Off-heat infusion prevents caramelization (which occurs above 320°F/160°C) and over-reduction of the syrup. Covering traps volatile aromatic compounds that would otherwise escape with steam.

Techniques that matter

Infusion

Steeping vanilla in hot syrup extracts fat-soluble aromatic compounds (vanillin, eugenol) that water alone cannot fully dissolve. The sugar acts as a carrier and preservative for these volatiles.

Crystallization control

Proper technique (off-heat vanilla addition, minimal agitation) prevents sucrose re-crystallization. The 1:1 ratio is below the maximum supersaturation point, making the syrup physically stable.

Pasteurization

Heating to boiling point (212°F/100°C) kills surface microorganisms and extends shelf life. When stored refrigerated and clean, this provides 3–4 weeks of stability.

Rich vanilla syrup (2:1)Modern craft cocktail bars

2 parts sugar : 1 part water by weight. Thicker, more intensely sweet, pours slower. Preferred for stirred cocktails (Old Fashioned, Manhattan variation) where dilution must be controlled. Less water means faster dilution in ice-stirred drinks.

Alcohol-preserved vanilla syrupProfessional and craft production

Add 10–20% by volume of 40% ABV vodka (or high-proof neutral grain spirit) to finished syrup. The ethanol inhibits microbial growth, extending refrigerator shelf life from 4 weeks to 3+ months. Common in commercial production.

Lavender vanilla syrupFrench Provence, American specialty coffee

Add 1 tbsp dried culinary lavender buds (French variety) during steeping. Steep separately 10 minutes, strain, then combine. Used in lavender vanilla lattes and floral desserts.

Sirop de vanille à la crèmeFrench pastry terminology

A heavier, creamier vanilla syrup where butterfat or cream is incorporated (typically 1:1:0.25 water:sugar:cream ratio). Used for finishing warm pastries, allowing a glossy, velvety coating. Not shelf-stable.

Troubleshooting

Syrup crystallized into grainy texture within days

Sugar was stirred during boiling or cooled too slowly, creating seed crystals for re-crystallization. Impurities (dust, utensil residue) can also trigger this.Gently reheat the syrup until crystals dissolve (212°F/100°C). Add 1 tbsp light corn syrup (invert sugar inhibits crystallization) per 200g batch. Prevent by never stirring boiling sugar water.

Weak or barely detectable vanilla flavor

Under-steeping (too short), insufficient vanilla (old, dried-out beans), or beans with low vanillin content. Adding extract at end without steeping fails to extract pod compounds.Steep spent vanilla bean in new hot syrup for 4–8 hours. For future batches, use plump, moist beans with visible oil on the cut surface; snap a bean — you should see beads of cavé oil. Authentic Madagascar Bourbon beans have the highest vanillin content.

Cloudy or murky syrup instead of clear

Pulp from vanilla cavé released into syrup (from cutting/splitting bean incorrectly), or syrup was not strained fine enough. Contaminated container or straining through dirty cloth.Strain through 2 layers of cheesecloth or a coffee filter. If cavé contamination is heavy, the only fix is re-straining. Always split vanilla beans with the tip of a paring knife, scraping cavé from the inside rather than chopping the whole pod.

Storage

Keeps 3–4 weeks refrigerated in clean, sealed glass bottle (bottled at bakery or coffee shop standards). 3–6 months if preserved with 15–20% vodka.Store in clean glass bottle or jar with tight-fitting lid. Do not introduce contaminants (unclean dipper, double-dipping). Keep at consistent refrigerator temperature 35–40°F. Do not store at room temperature for more than 24 hours. Reheat: Serve cold from refrigerator (most applications) or microwave 5–10 seconds to return to pourable viscosity if solidified. For cleaning sticky bottle, soak in warm water.
