Тісто для вареників · A foundational unleavened wheat dough used as the wrapper for varenyky (Ukrainian boiled dumplings). It is firm yet tender, elastic enough to roll thin without tearing, and strong enough to hold a filling while boiling without splitting open.

The formula

3:1 flour:liquid by weight, +1 egg per ~250g flour

Proportions vary; scalded (заварне) versions replace cold liquid with boiling water and often omit the egg.

Troubleshooting

Dough is sticky and hard to roll
