Troubleshooting
Waffles stick to the iron despite greasing
Iron insufficiently preheated, batter poured on cold surface, or damaged/poorly seasoned surface. Also caused by overmixing batter, which produces excessive surface tension. → Ensure iron reaches full temperature (190 °C+) before adding batter. Apply thin, even coat of high-smoke-point oil with pastry brush. Replace damaged non-stick surface or reseason cast iron.
Waffles are pale and undercooked inside
Iron temperature too low or iron opened before steam fully developed (typically 4–6 minutes). Low temperature prevents proper gelatinization and Maillard browning. → Preheat iron 10–15 minutes. Do not open until steam emission drops significantly and no wet batter visible at edges. If batter is thick, thin with 1–2 tbsp milk.
Waffles are tough, rubbery, or chewy
Batter overmixed after combining wet and dry ingredients; gluten strands developed beyond acceptable range. Also caused by insufficient rest or fat. → Mix only until no dry flour remains — visible lumps are fine. Ensure batter rests full 30 minutes. Verify fat is properly incorporated and not omitted.
Waffles are dense and flat
Baking powder expired or insufficient; leavening failed to produce adequate gas. Batter may also be too old (leavening exhausted after extended sitting). → Use fresh double-acting baking powder (test: drop ½ tsp into hot water — vigorous bubbling confirms activity). Cook batter within 1 hour of mixing.
