The formula

200 g sugar : 60 ml water : 125 ml heavy cream (35 % fat) : 40 g butter : 2 g fleur de sel (finishing)

Scale by the gram. Cream is always heated separately before incorporation. Water quantity is minimal — just enough to dissolve and wet the sugar surface to control crystallization; too much dilutes the caramelization. Butter is stirred in off-heat after cream to enrich texture and shine.

Method

Techniques that matter

Controlled caramelization without stirring

Caramel is a dry-heat reaction (pyrolysis of sucrose). Agitation introduces crystal nuclei that ruin texture by causing the syrup to seize into a solid mass rather than remaining fluid.

Wet-wall technique (washing down crystal seeds)

Sugar crystals migrating to the pan walls are the primary cause of cascade crystallization. Wiping them down with a wet brush eliminates the seed points.

Hot-liquid stop

Adding a hot liquid to a dry caramel halts the Maillard/caramelization reaction immediately, fixing the color and flavor at the desired stage. This is the defining maneuver of the wet caramel method.

Emulsification via fat incorporation

Butterfat dispersed in the sugar solution creates an oil-in-water emulsion, giving the sauce its characteristic gloss, richness, and fluid pourability.

Dissolve 15–20 g instant espresso powder into the hot cream before incorporation. The bitter coffee notes deepen the caramel and balance sweetness.

Caramel de cidreNormandy, France

Replace cream with heated apple cider (reduce by half first for intensity). Used as a glaze for pork or duck. Tart, fruity, savory-sweet.

Troubleshooting

Caramel seizes into a hard mass when cream is added

Caramel cooked too far (above 190 °C) or cream added too slowly, allowing the sugar to resolidify completely before dissolving.Return the seized mass to low heat with a splash of water, stirring until dissolved, then proceed with the full cream quantity.

Grainy, crystalline texture throughout

Sugar crystals were not fully dissolved before boiling, or crystals from the pan walls were not washed down during cooking. Undissolved sugar seeds crystallization throughout the batch.Strain through a fine sieve. If graininess persists, remelt with 2–3 tablespoons water and a few drops of lemon juice, reheat to dissolve crystals, then continue.

Greasy surface / broken emulsion

Butter incorporated too quickly or in too-large pieces, or the mixture was stirred vigorously after cooling — butterfat separates out as pools.Gently reheat the caramel to 50–60 °C and whisk briskly to re-emulsify. Do not exceed this temperature or the emulsion will break further.

Too pale / weak caramel flavor
