Wet Masala
मसाला पेस्ट (Masala Paste) · A cooked aromatic spice paste combining fried onion, ginger, garlic, bloomed ground spices, and fat. This emulsified base forms the foundational flavor engine for South Asian curries, braises, and stews. Unlike dry masala (ground spice powder), wet masala suspends fat-soluble compounds in oil, enabling deeper extraction of curcumin, capsaicin, and eugenol while driving Maillard browning during cooking.

The formula
3:1:1 aromatics : fat : spices by weight
Example: 150g fried onion + 50g ginger-garlic paste : 50g oil/ghee : 50g ground spices. For richer korma-style dishes, increase fat to 1.5 parts. Paste should hold shape on a spoon. Yield: approximately 500–600g protein or 800g vegetables per 100g paste (4–6 servings).

- Onion-ginger-garlic trinity forms the aromatic backbone—wet masala requires at least two of these three
- Oil or clarified butter is non-negotiable: it extracts fat-soluble flavor compounds (curcumin, piperine, eugenol) that water alone cannot solubilize
- Spices must be bloomed in fat before blending—raw wet masala lacks aromatic depth and complex flavor development
- The paste must be cooked until fat visibly separates (bhunao phase)—indicating water evaporation and Maillard completion
- Salt and acid (tomato, tamarind, yogurt) are added late, after blending, to preserve volatile aromatics

Method

Techniques that matter
Bhunao (Frying to oil separation)
The moment oil visibly separates and pools on the surface indicates water has fully evaporated and Maillard browning is complete—critical for depth of flavor.
Tempering (Tarka/Tadka)
Hot fat with spices poured over a dish at service; wet masala is the base that receives this final aromatic bloom, layering flavor complexity.
Emulsification
Wet masala's fat matrix suspends water-soluble and fat-soluble flavor compounds together; cooking in fat ensures both types are fully extracted.

Troubleshooting
Paste tastes raw and bitter
Spices were not bloomed in fat long enough; insufficient cooking after blending; water not fully evaporated → Return paste to pan, cook on low heat 5–10 minutes stirring until oil separates again and paste darkens slightly.
Oil separates too quickly during cooking of final dish
Too much fat in initial paste ratio; not enough liquid added when cooking down → Add 50–100ml liquid (water, stock, or yogurt) per 100g paste; reduce heat and cook covered to integrate.
Paste sticks and burns during bhunao
Insufficient fat relative to aromatics; heat too high; pan too small → Use wider pan to increase surface area; ensure fat covers at least 1/3 of pan surface; reduce to medium heat.
