crème fouettée · A light, aerated dairy foam produced by incorporating air into heavy cream through vigorous mechanical action. The fat globules in cream, when agitated while cold, partially coalesce and trap air bubbles, creating a semi-rigid foam that holds its structure. Sweetened with sugar and flavoured with vanilla, it becomes crème chantilly — the classic French preparation.

The formula

100 parts cream (by weight) : 8–10 parts sugar : 0.5–1 part vanilla extract

Classic crème chantilly ratio. Sugar is approximately 8–10% by weight of the cream. Vanilla is 0.5–1% by weight. No sugar = unsweetened whipped cream. The vanilla is flavouring, not structural.

Ingredients

Method

  1. 1Place bowl and whisk (or whisk attachment) in freezer for 15–20 minutes until thoroughly chilled.Cold cream and equipment keep the fat solid and resistant to coalescence during initial incorporation of air. Warm cream causes fat to melt and the foam to collapse immediately.
  2. 2Pour cold cream into chilled bowl. Add sugar, vanilla, and salt if using.Introducing sugar at the start allows it to begin dissolving as whipping progresses, preventing graininess. Adding flavourings early distributes them evenly.

Handheld electric mixer

Practical middle ground between hand and stand mixer. Requires holding the beaters steady and watching the cream at an angle.

Siphon/whipped cream charger

Crème chantillyFrance

Classic sweetened version: cream + sugar + vanilla. Served with fresh fruit, on pastries, or as dessert garnish. The name originates from the Château de Chantilly.

Crème mascarponeItaly

Whipped mascarpone mixed with sugar and sometimes cream to lighten. Much richer and denser than chantilly. Used in tiramisu and as cake filling.

KremboIsrael

Seasonal chocolate‑dipped whipped cream on a biscuit stick. The foam is made with gelatin for stability.

Troubleshooting

Cream will not whip — remains liquid

Cream fat content below 30 %; cream too warm; equipment not cold; old cream with damaged fat globulesVerify cream label for minimum 35 % fat. Refrigerate bowl and whisk 15–20 min before use. Use fresh cream within 5 days of opening.

Foam collapses or turns watery immediately after whipping
