whipped cream
crème fouettée · A light, aerated dairy foam produced by incorporating air into heavy cream through vigorous mechanical action. The fat globules in cream, when agitated while cold, partially coalesce and trap air bubbles, creating a semi-rigid foam that holds its structure. Sweetened with sugar and flavoured with vanilla, it becomes crème chantilly — the classic French preparation.

The formula
100 parts cream (by weight) : 8–10 parts sugar : 0.5–1 part vanilla extract
Classic crème chantilly ratio. Sugar is approximately 8–10% by weight of the cream. Vanilla is 0.5–1% by weight. No sugar = unsweetened whipped cream. The vanilla is flavouring, not structural.
Identity
- Heavy cream with ≥35 % fat content — lower fat will not hold air
- Chilled bowl and whisk — cold fat incorporates more readily and resists breaking

Method
- 1Place bowl and whisk (or whisk attachment) in freezer for 15–20 minutes until thoroughly chilled.Cold cream and equipment keep the fat solid and resistant to coalescence during initial incorporation of air. Warm cream causes fat to melt and the foam to collapse immediately.
- 2Pour cold cream into chilled bowl. Add sugar, vanilla, and salt if using.Introducing sugar at the start allows it to begin dissolving as whipping progresses, preventing graininess. Adding flavourings early distributes them evenly.
- 3Whisk at medium speed initially to incorporate air and increase volume. Once foam forms with small bubbles, increase to medium‑high.The initial aeration builds the foam structure. Starting at high speed risks overwhipping before sufficient volume is achieved.
- 4Whisk until firm peaks form — the cream holds its shape when the whisk is lifted, bending slightly at the tip.Firm peak indicates adequate fat coalescence and air incorporation without overworking. Overwhipping (curds forming) is irreversible.
- 5Use immediately or store at 4 °C (39 °F) for up to 2 hours. Cover with plastic wrap touching the surface to prevent weeping.Whipped cream begins weeping immediately as air cells are not permanent. Surface contact prevents a skin from forming and slows moisture separation.
Techniques that matter
Whisking (balloon whisk)
Traditional method giving tactile control over texture. Requires physical effort but produces consistent results with practice. Bowl rotation helps incorporate evenly.
Stand mixer with balloon whisk
Frees the cook to observe texture without holding equipment. Must be watched closely — machines whip faster than hand and can cross into overwhipped in seconds.
Handheld electric mixer
Practical middle ground between hand and stand mixer. Requires holding the beaters steady and watching the cream at an angle.
Siphon/whipped cream charger
Professional and instant method using nitrous oxide to dissolve gas into cream. Requires pre‑chilled cream and clean equipment. Yields lighter, less stable foam than manually whipped.

Crème chantillyFrance
Classic sweetened version: cream + sugar + vanilla. Served with fresh fruit, on pastries, or as dessert garnish. The name originates from the Château de Chantilly.
Crème mascarponeItaly
Whipped mascarpone mixed with sugar and sometimes cream to lighten. Much richer and denser than chantilly. Used in tiramisu and as cake filling.
KremboIsrael
Seasonal chocolate‑dipped whipped cream on a biscuit stick. The foam is made with gelatin for stability.
Whipped cream (unsweetened)Universal
Plain whipped cream without sugar or flavouring. Used in savoury preparations (soups, sauces) or as a neutral garnish.

Substitutions
- heavy cream (35 % fat) → coconut cream (full‑fat, chilled) — Solid coconut cream from a can whipped similarly. Fat content must be measured; some brands vary. Produces stable, dairy‑free foam with coconut flavour.
- heavy cream → crème fraîche (lightly whipped) — Crème fraîche already contains bacteria that slightly thicken it. Can be whipped further but will not reach the same airy volume. Tarter flavour.
- sugar → powdered sugar (icing sugar) — Powdered sugar includes about 3 % cornstarch, which acts as a stabilizer. Preferred by many professionals for smoother texture and slightly improved stability.
Troubleshooting
Cream will not whip — remains liquid
Cream fat content below 30 %; cream too warm; equipment not cold; old cream with damaged fat globules → Verify cream label for minimum 35 % fat. Refrigerate bowl and whisk 15–20 min before use. Use fresh cream within 5 days of opening.
Foam collapses or turns watery immediately after whipping
Overwhipped — fat has fully coalesced into butter and buttermilk, losing air‑holding structure; cream was too warm → Once overwhipped, the process cannot be reversed. Start fresh with thoroughly chilled equipment and cream. Stop whisking at firm peak.
Grainy texture with undissolved sugar crystals
Sugar added too late in whipping; granulated sugar not fully dissolved before cream stiffens → Use icing sugar (powdered) which dissolves immediately, or add sugar at the beginning and ensure it fully dissolves before cream thickens.
Weeping (liquid pooling at bottom of bowl within minutes)
Foam structure is too fragile; underwhipped; sugar not properly integrated; cream not cold enough during service → Whip to firm peak. Ensure sugar is fully dissolved. Serve immediately or store covered with plastic wrap pressed to surface at 4 °C (39 °F).
