Crema (Espresso)

The reddish-brown emulsified foam that forms on the surface of a well-extracted espresso, composed of CO₂ bubbles stabilized by coffee oils and proteins.

Definition

Crema is the dense, caramel-colored foam layer produced when hot water at 9 bars of pressure forces through finely ground, freshly roasted coffee. As pressurized water contacts the grounds, it supersaturates with CO₂ gas released during roasting and subsequently absorbed into the bean's oils. When pressure drops at the spout, dissolved CO₂ nucleates into millions of tiny bubbles coated by surfactant compounds — melanoidins (Maillard-derived polymers), chlorogenic acid lactones, and lipid fragments — that stabilize the foam into a persistent, creamy emulsion. A healthy crema is reddish-hazel to dark amber, 2–5 mm thick, has a slightly mottled or tiger-striped pattern, and persists for 1–2 minutes. Its texture should be fine-grained (not open-bubbled) and adhere briefly to a metal spoon. Crema serves as a quick extraction diagnostic: pale, thin crema indicates under-extraction (too coarse a grind, too short a shot, low pressure, or stale beans); very dark or almost black crema with a pale ring can indicate over-extraction or excessively fine grounds; thick reddish crema with slow drip and good persistence suggests good extraction within the 25–30-second window. Very fresh beans (under 4–7 days post-roast) produce excessive crema due to high CO₂ outgassing; aged beans produce little or none. Robusta varietals generate a thicker, more persistent crema than Arabica due to higher CO₂ retention and different lipid profiles. Crema dissipates more quickly in milk-based drinks; in a properly pulled espresso served immediately, it should integrate into the cup when stirred.

In use

Crema as Flavor Carrier

Crema concentrates volatile aromatic compounds. The first sip of a traditional espresso consumed immediately after pulling delivers a concentrated aromatic punch precisely because those volatiles — fruity esters, nutty pyrazines, caramel furanones — are temporarily suspended in the foam. Waiting until crema dissipates loses a detectable fraction of that aromatic complexity.

Robusta and Crema Myths

Commercial espresso blends historically included a small proportion of Robusta (5–20%) not for flavor but to boost and stabilize crema. Specialty coffee's move toward pure-Arabica single-origin espresso has partly decoupled crema thickness from quality: a thin but honey-golden crema on a great washed Ethiopian can indicate a superior shot compared to a thick, dark crema from a stale commodity blend.
