Definition
Croustillant (French: 'crispy,' 'crunchy') refers both to a textural quality and to a specific component in composed pastry — a thin slab or disc of fragile, shatteringly crisp material incorporated between softer layers of mousse, ganache, or cream. In professional pastry, the croustillant layer is almost always constructed from feuilletine (pailleté feuilletine) — ultra-thin, toasted wheat wafer flakes — mixed while warm with a binding matrix of melted chocolate (dark, milk, or white), praline paste, and often a small quantity of butter or vegetable fat. The fat-and-chocolate binder coats each flake, creating a pourable slurry that is spread thinly (3–5 mm) onto acetate or a silicone mat, allowed to set, and then cut or pressed into shape before assembly into an entremet or tart. The result is a layer that remains crisp even after refrigeration, provided moisture transmission from adjacent layers is controlled — typically by applying the croustillant directly against the chocolate glaze or a thin barrier of tempered chocolate. Common formulas combine praline noisette or praline amande with milk couverture at roughly 50:50 by weight, then add 15–25% feuilletine by total weight. Gianduja, peanut butter, and tahini are used as modern variants of the praline base.

Moisture management
The primary engineering challenge of the croustillant is preventing the feuilletine from absorbing moisture from adjacent cream or mousse layers and going soft. The standard solution is to sandwich the croustillant between two thin layers of tempered or crystallized chocolate, which act as a vapor barrier. Using a fat with a higher melting point (e.g., cocoa butter added to the praline binder) also slows migration.
Feuilletine sourcing
Pailleté feuilletine is produced by crumbling or crushing unfilled crêpes dentelle (Gavottes is the canonical brand from Brittany) or purpose-made commercial wafer flakes. The two behave similarly but commercial feuilletine tends to have a slightly more uniform particle size, which benefits consistent spreading. Home pastry cooks can substitute crushed Gavottes, rice crisps, or even lightly crushed cornflakes in a pinch, though the texture is coarser.
