Tempering (Chocolate)

A controlled melt-and-cool process that stabilizes cocoa butter into Form V crystals, giving chocolate a sharp snap, glossy surface, and extended shelf life.

Definition

Cocoa butter is polymorphic: it can solidify into six distinct crystal structures (Forms I–VI), each with a different melting point and texture. Only Form V (also called beta-2 crystals, melting point ≈ 33–34 °C) produces the qualities associated with professional chocolate work — a clean break, a mirror sheen, and a melting temperature just below body heat. Untempered chocolate sets dull, soft, and prone to fat bloom (a greyish haze caused by Form VI recrystallization). Tempering is the technique of guiding cocoa butter exclusively into Form V. The classic three-stage method: (1) melt all chocolate to 45–50 °C to eliminate all existing crystals; (2) cool to 26–28 °C while agitating (by spreading on a marble slab, seeding with tempered callets, or using a machine), encouraging Form V nucleation; (3) gently raise back to 30–32 °C (dark), 29–30 °C (milk), or 27–28 °C (white) for working temperature, melting out any unstable lower-form crystals while preserving Form V. Temperature ranges vary by chocolate type because varying milk-solid and sugar content alters the melting points. Proper temper is confirmed by the 'set test': a drop of chocolate placed on a cold surface should set firm and shiny within 3–5 minutes at room temperature.

In use

She tabled the melted couverture on the marble, working it with a bench scraper until it reached 27 °C before returning it to the bowl — the tempered chocolate would set with a clean snap.

Seeding method vs. tabling

Seeding — adding finely chopped or calletted tempered chocolate (25–30% by weight) to melted chocolate at 32–34 °C and stirring until it cools to working temperature — is faster and more reliable than tabling (the traditional marble-slab method) and requires no extra equipment. Continuous-tempering machines use a seeding cylinder and are standard in production environments.

Why humidity matters

Water is chocolate's enemy during tempering: even a few drops cause 'seizing,' in which the fine sugar particles clump around water molecules, turning the mass grainy and unworkable. All tools must be bone-dry. High kitchen humidity (above 60% RH) can also interfere with the set of dipped or moulded chocolates.

Compound vs. couverture

Compound chocolate — in which cocoa butter is replaced with palm oil or another vegetable fat — does not require tempering because non-cocoa-butter fats are not polymorphic in the same way. However, compound chocolate also lacks the flavour depth and mouthfeel of real couverture.
