A conche is an industrial chocolate-making machine that continuously kneads, shears, and warms cocoa mass over hours or days. The prolonged agitation drives off volatile acids, evenly coats particles in cocoa butter, and reduces grittiness so the finished chocolate melts smoothly. Conching time is one of the key variables a chocolatier controls to dial in flavor and mouthfeel.
A conche is a heated, agitated mixing machine that develops the flavor and texture of chocolate after the nibs have been refined into a paste. Invented by Rodolphe Lindt in Bern in 1879, it works by shearing a thick chocolate mass between heavy rollers, paddles, or blades for many hours, generating friction heat while the batch is held at roughly 60–70 °C / 140–160 °F. This sustained working coats every cocoa and sugar particle with a thin film of cocoa butter, drives off residual moisture, and volatilizes harsh acids — particularly acetic acid left over from fermentation — while gentle oxidation rounds a chocolate's flavor into something balanced and mellow.
What separates a conche from a melanger or roll refiner is its place in the chocolate-making sequence. The melanger grinds nibs into paste and reduces particle size; the conche takes that already-refined paste and works it further, often with additions of cocoa butter and lecithin to tune viscosity, until the chocolate loses its graininess and raw, sharp edge. Without conching, even a finely refined chocolate tastes sandy, sour, and thin. With it, the same mass becomes smooth, glossy, and emulsified — the signature mouthfeel of a good couverture. A conche is dedicated equipment, not a hand technique, and it sits between refining and tempering in the production chain.

Original design: a long granite trough with heavy reciprocating granite rollers sliding back and forth. Very long cycle times, prized for the depth of flavor it produces; largely obsolete in industry but historically important.

Conche vs. Melanger: A Common Mix-up
The most persistent error in popular chocolate writing is to use 'melanger' and 'conche' interchangeably. They are not the same machine, and they do not do the same job.
- A melanger (stone grinder) reduces particle size: it takes roasted nibs and sugar and grinds them into a paste, typically over 18–72 hours, until the solids are fine enough to feel smooth on the palate.
- A conche starts with an already-refined paste. Its job is flavor and texture development — coating particles in cocoa butter, evaporating moisture and acetic acid, and rounding out harsh notes — not grinding.
- In a bean-to-bar shop the same melanger is often run far longer than needed for grinding, and the late hours of that run are effectively acting as a conche. Industrially, the two stages are kept separate so each can be optimized.
What Conching Actually Does to the Chocolate
Conching is doing several physical and chemical jobs at once, and the length of the run is largely a function of how thoroughly you want each one to finish. Mechanically, it shears the mass until every solid particle is wetted and coated by cocoa butter, eliminating the gritty, dry feel of under-worked paste. Chemically, the heat and aeration drive off water and volatilize residual acids — especially acetic acid carried over from poorly controlled fermentation — so the finished chocolate reads rounder and less sharp. A small amount of oxygen uptake also helps round harsh aldehydes and pyrazines into mellower aroma compounds. Industrially these jobs are balanced against throughput: a long, slow conch builds deeper flavor at the cost of time, while a short high-speed conch is efficient but can leave trace acidity and a less developed profile.

Tips & pitfalls
- Conching comes after refining — you cannot conche raw nibs; the mass must first be ground to a paste through a melanger or roll refiner.
- Do not call a melanger a conche, or vice versa. A melanger grinds; a conche develops flavor on an already-refined mass.
- Dark chocolate generally benefits from longer conching than milk chocolate, where milk proteins and sugars are sensitive to extended heat and can scorch or over-brown.
- Add cocoa butter (and lecithin) gradually during the cycle to keep viscosity in range; dumping it all in early can over-lubricate the mass and slow flavor development.
- Keep the batch under roughly 70 °C / 160 °F. Overheating can scorch milk solids and pre-crystallize cocoa butter into the wrong form, which then fights you at the tempering stage.
- Modern high-speed conches can collapse 48–96+ hours of traditional conching into 12–16 hours, but flavor nuance often differs from a long, slow batch — taste the two side by side if you have the option.
- Trust your nose at the end-point: sharp, vinegar-like acetic notes should give way to rounded, roasty-cocoa aromas. Pulling the batch too early leaves acidity; over-conching flattens origin character.
- For single-origin beans, err on the shorter and gentler side. Over-conching homogenizes flavor and can mute the terroir notes you paid a premium for.
