An electric griddle is a countertop appliance built around a wide, flat metal plate heated from below by an embedded electric element, with a thermostat to hold the surface at a chosen temperature and usually a small drip channel feeding a removable grease tray. The plate is most often die-cast aluminum finished with a non-stick coating, though cast-iron and hard-anodized versions exist. The defining feature is surface area: 10 to 22 inches of continuous, even heat, with edges low enough to slide a spatula under food without a wall of metal in the way.
That geometry changes how food cooks compared with a skillet. There is no tall sidewall to trap steam, so moisture escapes and you get browning rather than braising, which is why pancakes get an even golden face and smash burgers form a real crust. The thermostat holds a steadier temperature than a burner under a pan, so delicate work (eggs, crepes, blini) stops guessing at the dial. The trade-off is recovery time: drop a tray of cold batter on the plate and the surface temperature sags, so cooks learn to portion and let the griddle reheat between batches.

How it differs from a skillet
A frying pan concentrates heat in a small circle and uses its sloped sides to toss, baste, and contain liquid. A griddle spreads the same heat across a large, nearly flat plane and barely contains anything. Three practical consequences follow. First, food releases moisture as steam rather than simmering in its own juice, so you brown instead of stew. Second, the low profile lets you slide a spatula under food cleanly and flip it with a quick wrist motion, no pan wall to dig through. Third, you trade wall height for throughput: a single 20-inch plate can hold a dozen silver-dollar pancakes, six smashed patties, or a whole meal's worth of vegetables at once, which is the whole reason diners still use flat-tops.
Reading the surface
Even on a good griddle, the plate is not perfectly uniform. The area directly over the element runs hottest, the front edge near the controls tends to be cooler, and the corners lose heat fastest. Learning to read those zones is the difference between food that is evenly colored and food that is burnt in the middle and pale at the edges. Cook items that demand precision in the center zone, use the cooler edges as a holding area, and rotate batches 180° halfway through when even browning matters, as you would on a baking sheet.
Coatings and care
Most home griddles ship with a PTFE non-stick coating; newer models increasingly offer PFAS-free ceramic or titanium-based coatings that perform similarly out of the box but lose slickness sooner. Both want the same gentle treatment: wooden, silicone, or nylon tools only, no aerosol cooking sprays (the propellant polymerizes into a gummy film that is nearly impossible to remove), and hand-wiping rather than soaking or the dishwasher. Bare cast-iron plates are the exception and should be seasoned the way you would a skillet — a thin film of oil, heat past smoke point, wipe, repeat — and stored dry to prevent flash rust.

- Test heat with a few drops of water: they should skitter and evaporate almost instantly at the right setting
- Use a light film of oil or clarified butter even on non-stick — it improves crust and extends the coating's life
- Never use aerosol non-stick sprays on coated plates; the propellant builds up as a sticky residue that is very hard to remove
- Leave space between items so steam can escape; crowded food steams and turns pale instead of browning
- Reserve the cooler edge or a low zone as a holding area for finished food so nothing overcooks while the rest catches up
- Empty the drip tray before every session; an overfilled tray can smoke, overflow, and cause flare-ups
- Clean while the plate is warm, not scorching — wipe with paper towels, then a damp cloth, and skip abrasive pads that scour off non-stick
- For stuck-on food, deglaze the warm plate with a little water and a wooden scraper; never submerge the electrical base or run it under a faucet
- Stick to wooden, silicone, or nylon utensils on coated surfaces; metal tools scratch and shorten the life of the plate
