A fermentation heating mat is a flat electric pad that gently warms whatever sits on it, holding cultures in their preferred temperature range. It is used to proof bread dough, incubate yogurt, koji, and tempeh, and keep kombucha or sourdough lively in a cool kitchen. Paired with a thermostat, it provides consistent warmth without an oven.
A fermentation heating mat is a flat, flexible electric warming pad — usually 10 to 25 watts — that lifts the temperature of whatever sits on it a few degrees above the surrounding air. The element inside is a thin resistance wire or carbon film sealed in PVC or silicone, and the whole thing plugs into a wall outlet like a lamp. Because it produces only gentle warmth, it is not a cooking device; it is a climate device, a way to give yeast, lactic bacteria, and SCOBYs the steady, narrow temperature window they need to do their work predictably.
That narrow window is the reason the mat exists. Most cultures that ferment or proof well — sourdough, yogurt, kefir, kombucha, lacto-fermented vegetables, koji, miso — do their best work between roughly 65 and 110 °F. A chilly kitchen in winter, an unheated pantry, or an over-air-conditioned summer room can drag the ambient temperature 10–20 °F below those targets, slowing fermentation to a crawl or stalling it entirely. The mat supplies a quiet, even bottom-heat so the ferment runs on schedule and the cook isn't guessing whether the dough will double by morning.
In practice, the mat only adds a few degrees of lift, so it is most useful in cool spaces. In an already-warm kitchen it adds nothing, or worse, pushes the ferment past its ideal range. A bare on/off mat gives one fixed output; pairing the mat with an external digital probe thermostat turns it into a precise, set-and-forget tool that most serious sourdough bakers and yogurt makers consider essential.

Setting Up a Mat With a Thermostat
A bare mat gives one fixed output that drifts with the room, which is fine for a stable kitchen in spring and fall but frustrating in winter or in an air-conditioned space. Adding an external controller changes the experience. A probe is taped to the side of the jar (liquid against the glass, secured with a small strip of painter's tape) and the controller is set to the target temperature. The controller then cycles the mat on and off to hold that point. Most home users start with a bare 10 × 20 in mat and a separate PID or digital thermostat such as an Inkbird or STC-1000, because the built-in controllers bundled with cheap kits are often inaccurate.
- Tape the probe to the outside of the jar at the level of the liquid, not above it — temperature stratifies in a tall jar.
- Allow 30–60 minutes for the system to settle before trusting the reading; the mat, the vessel, and the contents all need to come to equilibrium.
- Set the controller a degree or two below your true target — the mat's heat continues to rise briefly after it cuts off.
Matching the Mat to the Ferment
Different ferments want different floors and ceilings, and the mat is the tool that holds them there. A sourdough levain and a bulk-fermenting dough want a slow, even 75–82 °F; warmer and the yeast races, cooler and the dough sits all day. Yogurt is the hottest common target at ~110 °F, which is why most home yogurt makers run a mat with a thermostat rather than guessing. Kombucha likes the high 70s to low 80s; lacto-fermented vegetables like it cooler, in the high 60s to low 70s, so a warm kitchen plus a mat can actually be too much.
- Yogurt and other mesophilic/thermophilic cultures: 108–112 °F — controller strongly recommended.
- Sourdough bulk and levain: 75–82 °F — a bare mat in a cool room is usually enough.
- Kombucha, water kefir, jun: 75–85 °F — narrow window; a controller pays for itself.
- Lacto-fermented vegetables: 65–72 °F — a mat in a warm kitchen often overshoots; use a timer or skip it.
- Miso, koji, long ferments: 75–85 °F — sustained for weeks, so a stable mat and probe setup is worth the investment.
Common uses
Tips & pitfalls
- Always put a folded kitchen towel or a trivet between the mat and the vessel; direct contact creates hot spots on glass bases and can overheat the underside of a dough, throwing off fermentation.
- Calibrate with an independent probe thermometer taped to the jar — the mat's stated surface temperature is almost never the temperature inside a jar of liquid or a bowl of dough.
- In a warm room (above roughly 75 °F / 24 °C), a bare mat often over-heats; turn it off and rely on ambient warmth, or plug it into a timer for short cycles.
- Never cover the mat with a sealed plastic sheet — trapped heat builds up and can damage the element or the work surface beneath it.
- Do not use a fermentation mat as a trivet for hot pans coming out of the oven; the sustained higher temperature degrades PVC over time.
- If fermenting strong-smelling foods (kimchi, garlic, certain misos), lay plastic wrap over the mat before setting jars down — the PVC will absorb and hold odors for months.
- Set the mat on a rigid, flat surface such as a cutting board, a plywood sheet, or a stone counter; sagging shelves or soft foam insulate the bottom and distort heat distribution.
- Coil the mat loosely or store it flat — sharp folds can fracture the internal resistance element and create dead spots.
