A French top, or plaque, is a thick, flat steel or cast-iron cooking surface heated from a single center source so it forms concentric heat zones. Chefs move pots and pans across it, hottest in the middle for searing and cooler toward the rim for gentle simmering and holding. It lets one cook tend many pans at once and is favored in fine-dining kitchens.

A French top — or plaque chauffante — is a thick steel plate that sits directly over a gas burner, turning a single open flame into a smooth, continuous cooking surface with a built-in temperature gradient. The plate is usually heavy-gauge mild steel or cast iron, ½" to 1" thick, and is shaped so that the metal is thickest at the center above the burner and tapers (or simply conducts heat outward) toward the edges. The result is a bullseye of heat: scorchingly hot where the flame lives, gently warm around the rim, with every temperature in between available simply by moving the pan a few inches across the surface.

This gradient is the entire point of the tool. In a busy garde-manger or saucier station, a cook needs to hold multiple pans at different temperatures at the same time — a beurre blanc on the verge of breaking, a demi-glace reducing to a glaze, a pot of court bouillon keeping warm, a finished tranche of salmon waiting for service. On a standard range, that means six burners and constant fiddling. On a French top, it means one burner and a well-trained hand that knows where the hot zones are. The plate is the original passive heat-management system, and it is still one of the most elegant.

It is also slow, heavy, and not particularly efficient for anything that demands a hard rolling boil or a screaming sear. A French top rewards patience: it takes 15 to 30 minutes to come to a true thermal steady state, and it holds heat long after the burner is turned off. In exchange, it gives the cook something no open flame can — a calm, predictable landscape of temperatures that can be read by feel, used for hours, and trusted to keep delicate work alive without scorching.

Reading the Zones

Once a French top has been at temperature for at least 20 minutes, the heat falls into a reliable pattern. The center, directly above the burner, will sear and scorch — treat it like a flat-top griddle in that small zone. A few inches outward, the plate is hot enough to maintain a vigorous simmer, the right place for reductions, glazes, and finishing pasta water. The middle ring is the workhorse zone: a steady, even warmth ideal for holding sauces, custards, and butter. The outer edge and corners are barely above a holding temperature, perfect for keeping finished plates warm or for gently softening butter without melting it.

A useful trick: flick a few drops of water onto the plate as it heats. The drops will dance in the center first, then in widening rings as the plate comes up to temperature — a built-in thermometer. The same test during service tells you where the gradient is sitting on any given day.

Seasoning and Care

A new mild-steel French top arrives as a bare silvery surface and benefits from the same treatment you would give a carbon-steel pan: a thin film of high-smoke-point oil, heated until it just begins to smoke, wiped clean, and repeated two or three times until the plate turns a deep, even bronze. This patina is not decorative — it slows rusting on the inevitable damp day and gives the surface the same nonstick memory that a well-seasoned griddle develops over months of use.

  • Scrape with a bench scraper while the plate is still warm (not blazing hot) to lift caramelized residue without pitting the steel
  • Wipe with a thin coat of oil after each service to protect mild-steel surfaces from flash rust
  • Never pour cold water onto a hot plate — the thermal shock can warp or crack even a thick slab
  • Stubborn carbon can be loosened with coarse salt and a cloth, the same way you would clean a carbon-steel pan

Tips & pitfalls

  • Preheat the plate fully before trusting the zones — a cold French top gives a flat, useless heat across the entire surface, and a cook who moves a pan too early will scorch it
  • Think of the plate as a clock face: the center is the burner, the rim is your holding zone — move pans outward as sauces reduce or proteins finish cooking
  • For emulsified sauces prone to breaking (béchamel, hollandaise, beurre blanc), park the pan on the perimeter where indirect radiant heat is gentler than direct flame
  • Never pour cold water on a hot French top — the thermal shock will warp or crack the plate, and a warped plaque is essentially ruined
  • Use flat-bottomed pans so they sit in full contact with the steel; a warped pan will rock and cook unevenly, and may slide off the hot center onto the floor
  • Keep the flame modest — the plate retains so much heat that a roaring burner will scorch the center, season the steel black, and waste gas for hours afterward
  • If a sauce is threatening to break or butter is browning too fast, slide the pan just two or three inches toward the edge; on a properly preheated plaque, that small move can drop the temperature by 50°F or more
  • A French top is the wrong tool for bringing a large stockpot to a boil quickly — use an open burner for the climb, then move the pot to the plaque's outer edge to hold the simmer
