High-BTU Wok Burner

A high-BTU wok burner is a concentric ring burner that delivers a roaring flame far hotter than a standard cooktop, designed to cradle a round-bottomed wok. The fierce heat creates wok hei, the smoky char that defines great stir-fry, and lets cooks flash-fry and toss ingredients in seconds. Restaurant versions, the bao lu or jet burner, sit in a recessed ring with a foot-pedal gas control.
A high-BTU wok burner is a single-purpose gas burner engineered to recreate the fire of a Chinese restaurant wok station. Where a standard residential burner delivers a flat pool of flame under the pan — useful for sauté pans and saucepots, useless for wok cooking — a wok burner arranges its gas ports in a ring around the cookware and angles them upward so the flame climbs the curved walls of a round-bottom wok. That ring of fire is the whole point: it heats the wok's sloped sides as aggressively as its base, which is the geometry stir-frying actually demands.
The reason this matters is heat. A typical home burner produces 7,000–12,000 BTU/hr; even a high-end residential wok insert tops out around 18,000. A restaurant jet burner runs 80,000–200,000+ BTU. That gap is the difference between ingredients that steam in their own moisture and ingredients that sear on contact, picking up the toasted, smoky flavor Cantonese cooks call wok hei — literally, the breath of the wok. Wok hei cannot be conjured by technique alone; it is a thermal event, and these burners exist to deliver it.
The burner itself is simple hardware — a cast-iron or steel body, a ring of drilled ports, an air shutter, a gas inlet. The real cost lives in the install: a 3/4" gas supply line, a regulator matched to the unit's pressure demand, and a ventilation hood of 600–1200 CFM. The enthusiast-class freestanding units (50,000–160,000+ BTU) almost always end up outdoors or in a garage, where the heat and fumes are tolerable and the gas line is easy to run. A 15,000–18,000 BTU drop-in insert is the realistic home compromise — modest gains over a stock burner, but enough to make a noticeable difference in a stir-fry.

Why a Wok Burner Isn't Just a Hot Burner
More BTU is not the only difference, and sometimes not even the main one. The defining feature is flame geometry. A standard burner fires upward into a flat-bottomed pan; a wok burner fires outward and upward into a curved one. That changes how heat reaches the food. On a wok burner, you can hold the wok tilted with its side wall in the flame ring, flash-searing a handful of aromatics in two seconds while the base of the wok stays relatively cool. This is how restaurant cooks manage a five-ingredient stir-fry in ninety seconds — each ingredient gets its own brief encounter with the hottest part of the fire, then is pushed up the wall to rest while the next one goes in. A flat pool of flame under the wok cannot do that, regardless of how many BTU you pump into it.

Installation Reality Check
For the 15,000–18,000 BTU drop-in class, installation is usually a matter of swapping a burner in an existing cooktop cutout — modest, doable, often compatible with the home's existing gas and electrical. Past that, the conversation changes. Freestanding units in the 50,000–160,000+ range draw more gas than a typical home branch line can safely deliver, so a 3/4" line and a dedicated regulator are standard. The hood, if you install indoors, must move serious air: 600 CFM is a floor, 1000+ is realistic at full throttle. Most buyers of these units end up putting them under a patio cover or in a ventilated garage, where the gas line can be run from the meter without opening walls and the fumes are not a problem. Plan for the install before you fall in love with the burner.

The Wok Hei Question
Wok hei is the toasted, smoky, almost-charred flavor that defines a great restaurant stir-fry and is largely absent from home cooking. It is not a single compound — food science research has identified dozens of volatiles, from pyrazines to aldehydes — but a thermal event: surface temperatures above roughly 200°C (400°F) in the presence of a little oil, applied to ingredients for a few seconds at a time. A home burner can hit those surface temperatures in a thin, dry pan, but a wok is heavy, curved, and full of food; a 10,000 BTU flame simply cannot recover between batches. A high-BTU wok burner can. This is why wok hei is associated with these burners and not, despite what some recipes suggest, with a particular sauce or technique.

- Pre-heat the wok until it just begins to smoke before the first drop of oil goes in; a cold carbon steel wok on a high-BTU burner will warp.
- Cook in small batches — more than a handful of ingredients at once drops the wok temperature faster than the burner can recover, and you lose the wok hei you bought the burner for.
- Tilt the wok up into the flame ring rather than parking it flat; the curved fire envelope is the design advantage and you should use it.
- Don't substitute a flat-bottom wok to 'save space' — flat bottoms sit below the flame ring and the burner performs like an ordinary hot plate.
- Ventilation is not optional: 600 CFM minimum indoors, 1000+ if you run at full output, and many serious cooks go outdoors instead.
- Season a new carbon steel wok with multiple thin oil layers before its first real cook; bare spots punished at this heat will pit.
- After cooking, let the wok cool on the burner, rinse with hot water, and re-oil — never soak carbon steel.
