Immersion Circulator (Sous-Vide)

A device that heats and circulates a water bath to cook vacuum-sealed food at a precise temperature.

An immersion circulator clamps to a pot of water and holds it at an exact set temperature while pumping it to keep heat even. Food sealed in bags cooks slowly and evenly in the bath, reaching a perfect doneness edge to edge that's impossible to overshoot. This sous-vide method lets cooks nail medium-rare steak or silky custards every time, often finished with a quick sear for color.

An immersion circulator is a clamp-on heating device that turns any heat-stable vessel into a precisely controlled water bath. Inside its housing sit three working parts: a coiled heating element, a PID-controlled thermostat, and a small impeller pump that continuously moves water across the heater and back into the bath. That circulation is what matters most — without it, the water stratifies into hot and cold zones, and food cooks unevenly. With it, the bath holds within roughly ±0.1 °C of the set point, which is the entire reason sous-vide cooking exists at all.

The device is the hardware half of the sous-vide technique; the other half is the vacuum-sealed bag. Together they let a cook set a target temperature and trust that the food will reach it evenly, edge to edge, without overshoot. A medium-rare steak, for example, is no longer a matter of timing and intuition but a function of holding the meat at 54.4 °C / 130 °F long enough for the center to equilibrate. The technique was developed in the early 1970s by French chef Georges Pralus, working with food scientist Bruno Goussault at Restaurant Troisgros, and remained laboratory- and restaurant-only until affordable consumer units arrived around 2010–2012.

Modern home circulators are compact, draw 800–1,500 watts, and clamp to the side of a stockpot or polycarbonate container. They are not the same as a water oven (such as the SousVide Supreme), which combines a bath and circulator in a single enclosed appliance. The circulator's job is more focused and, in many kitchens, more flexible: it is a precision instrument that should be cleaned, descaled, and stored with the same care as a good thermometer.

How It Works

The circulator's PID controller reads the water temperature many times per second and pulses the heating element to hold the set point. The pump then forces that heated water through vents in the housing and back into the bath, eliminating the thermal layering that would otherwise form around the heater. The result is a body of water that behaves more like a giant, gentle holding cabinet than a stovetop simmer. Understanding this explains two practical habits: food should be added only after the bath has stabilized at the target temperature, and bags should be arranged so water can flow around them rather than be trapped between them.

Choosing a Vessel and Setup

A 12 L polycarbonate hotel pan is the gold standard for a home cook: tall enough to submerge most steaks and roasts, stable on a counter, and a poor heat conductor so the circulator does not have to fight to maintain temperature. Stockpots work in a pinch but lose heat faster through the metal walls and may need a lid or plastic wrap to reduce evaporation during long cooks. Match the circulator's wattage to the bath — 1,000 W is comfortable for an 8 L bath at moderate room temperature, but a large bath in a cold kitchen benefits from a 1,500 W unit. Covering the surface with plastic wrap, a lid, or a handful of ping-pong balls cuts evaporation dramatically and keeps the heater from cycling as often.

Bagging and Searing

The bag does two jobs: it keeps the food in contact with its own juices and excludes air so heat transfers efficiently from the water. A chamber vacuum sealer is the cleanest tool for this and the only reliable option for liquids. For most home cooks, a zipper-lock bag sealed by the water-displacement method — slowly lowering the open bag into the bath until the water line forces air out, then sealing — works for solid foods. Either way, never seal food while it is hot unless you are using a chamber sealer; the steam will expand and burst the bag. After the bath, the bag surface is wet and will not brown. Pat the food dry and sear it hard and fast in a smoking-hot pan, on a grill, or with a torch to build the crust that sous-vide cooking cannot produce on its own.

Tips & pitfalls

  • Always preheat the bath to the target temperature before adding food; a cold bath that recovers around the food cooks the outer layer unevenly.
  • Weigh bags down or clip them to the container edge so they stay fully submerged — floating bags leave an unappetizing gray stripe of undercooked surface.
  • Arrange food in a single layer with space between bags so the pump-driven water can reach every surface.
  • Pat food dry and sear it hard and fast after the bath; the bag surface is wet and will not brown on its own, no matter how long you cook it.
  • Never seal hot food in a standard vacuum bag; the steam expands and ruptures the seal. Cool first or use a chamber sealer.
  • Cover the bath with plastic wrap, a lid, or ping-pong balls to cut evaporation and heat loss on cooks longer than 4 hours.
  • Acidify long-hold vegetables (asparagus, onions) with a splash of vinegar or lemon juice so they don't turn to mush in the bath.
  • Descale the heating element monthly with citric acid if you live in a hard-water area; scale buildup is the most common cause of drifting accuracy.
  • Label every bag with the contents, target temperature, and start time — it is remarkably easy to lose track when several bags share a bath.
