A kamado grill is an egg-shaped ceramic charcoal cooker whose thick walls retain heat and moisture for stable, efficient cooking. Adjustable top and bottom vents control airflow and temperature across a wide range, so the same unit grills hot, smokes low and slow, and bakes like an oven. The ceramic body and tight seal make it fuel-efficient and able to hold steady heat for many hours.

A kamado is a thick-walled ceramic cooker that runs on charcoal, with a hinged dome and adjustable cast-iron vents top and bottom. The walls — typically an inch or two of refractory ceramic with a glazed exterior — act as a thermal battery: they absorb heat from the fire and release it slowly into the cooking chamber, so a small fire of lump charcoal holds a steady temperature for hours. Air enters through the bottom draft door, feeds the fire, and exits through a calibrated vent in the dome lid; opening and closing those two vents is the entire temperature control system.

That thermal mass is what separates a kamado from an open kettle grill. A standard charcoal kettle loses heat fast when the lid comes off and burns through fuel quickly; a kamado shrugs off a 30-second peek and can hold 225 °F for an entire overnight brisket smoke on a single load of charcoal, then climb past 700 °F the next afternoon for pizza. With the same fire and a heat deflector in place — the Big Green Egg's convEGGtor, a Kamado Joe half deflector, or Primo's heat deflector rack — the cooker becomes a convection oven that mimics a wood-fired brick oven, capable of grilling, smoking, roasting, baking, and searing.

The form is Japanese: "kamado" simply means "stove," and the lineage runs back to clay rice steamers called mushikamado. The Western version arrived in 1974 when Ed Fisher launched the Big Green Egg in Atlanta, and the category has since grown to include several American and European makers as well as a few metal-bodied imitators. The main trade-off is that ceramic is brittle — a hot kamado shocked by cold rain, a splash of water, or a full-blast cold start can crack the lid or base. Treat the shell with the same care you'd give a clay pizza oven and it will cook for decades.

How the vents actually control temperature

The bottom vent feeds oxygen to the fire; the top vent controls how fast hot air and smoke exit the dome. With both wide open at lighting, the chimney effect brings the fire up fast. As you close the top vent first, the fire smothers and temperatures drop; close the bottom for fine adjustments. Most kamado cooks run the top vent nearly closed — a pencil-width opening — and the bottom vent 25–50% open to hold 225 °F, then open both for a 700 °F+ sear. The ceramic mass means response is slower than a gas grill: give it 5–10 minutes between adjustments before judging the result.

The indirect setup

For anything longer than about 20 minutes — ribs, pork shoulder, whole chicken, bread, pizza — you need to break the direct path between fire and food. A heat deflector sits above the fire and radiates heat around the food like an oven. With the deflector in place and a drip pan underneath, you can hold 225–275 °F for hours with minimal fuel. Half deflectors let you run true two-zone cooking: sear over direct heat on one side of the grate, then slide the food indirect to finish — the method that gives reverse-seared steaks and thick chops an edge-to-edge even doneness with a deep crust.

Sizing and accessories that matter

For most households, a Large (18–20 in / 45–50 cm grid) covers a whole chicken, a brisket, or two pizzas at once; a Medium (15 in) is the right pick for couples or small patios. The accessories that earn their keep are a heat deflector, a quality digital thermometer (the built-in dome gauge is often 25–50 °F off), a pizza stone, and a grill expander rack that doubles the effective cooking surface for weeknight vegetables. A weatherproof cover is not optional in cold or wet climates — freeze-thaw cycles and absorbed moisture are the most common cause of hairline cracks.

Tips & pitfalls

  • Use natural lump charcoal rather than briquettes — it burns hotter and cleaner, and imparts less binder taste on long cooks.
  • Never use lighter fluid. Light a charcoal chimney starter or an electric starter instead; chemical residue flavors the first cook and degrades the gasket.
  • Open both vents fully for lighting, then close the top vent to a pencil-width opening and the bottom vent to 25–50% to settle at 225 °F. Make adjustments in small steps and wait 5–10 minutes — the ceramic responds slowly.
  • Resist peeking. Every lid lift on a kamado can drop the dome temperature 50–100 °F and adds 10–15 minutes back to the cook; trust the thermometer instead.
  • Never shock a hot kamado with cold water, a rain shower, or a frozen roast. Move it under cover before storms, and let a cold grill warm up gradually on low draft for 15 minutes before opening the vents wide.
  • Burp the dome before opening it fully after a long cook or a sear. Crack the lid an inch, hold it a few seconds, then open — otherwise oxygen rushing in can flare the fire in your face.
  • Clean ash from the bottom bowl every 2–3 cooks. Packed ash blocks the bottom vent and makes temperature control sluggish or erratic.
  • Check the felt gasket yearly; if smoke leaks around the lid and the cooker won't hold temperature, a $30 gasket replacement restores performance.
