A vacuum sealer pulls the air out of a plastic bag and heat-seals it shut, and removing that air does two valuable things: it dramatically slows the spoilage and freezer burn that oxygen causes, and it creates the airtight, water-tight package that sous-vide cooking depends on. There are two main mechanisms. How to use it
Use the right bag, leave room to seal, and manage moisture. A clean, full seal is what protects the food.
- Use the bag type your machine needs — textured/embossed bags for edge sealers won't seal well if smooth
- Leave a few centimeters of empty bag above the food for the sealing bar to grip and weld cleanly
- Chill or partially freeze wet and saucy foods first so liquid isn't drawn into the machine
- Use the 'pulse' or moist setting (or stop the vacuum early) for delicate or wet items so you don't crush or pull liquid out
Food safety and care
Vacuum sealing extends life but doesn't sterilize — handle storage and the machine sensibly.
