Esther grew up in the cold spine of the Jura, where her mother kept a pot at the back of the stove that never fully went out — beans on Monday, a bird's carcass on Thursday, whatever the garden gave up by Sunday. After years cooking soup lines at a Lyon shelter, she now teaches the one-pot gospel: that a good stock built from bones and scraps, a handful of beans or lentils, and the bottom of the vegetable drawer will feed a table for pennies and warm it for hours.
