Ahu (earth-oven feast)

A communal earth-oven feast in which meats, fish, taro, breadfruit, and other provisions are slow-cooked on superheated stones in a sealed pit or mound to produce a mixed spread for ceremonial or communal occasions.

Technique
- Stone superheating
- Volcanic or basalt stones must be fired for 2–4 hours until they glow red and radiate intense dry heat — under-heated stones cannot sustain the 2–3 hour cook and leave taro corms raw at the center
- Density-staged oven loading
- Dense taro goes deepest (closest to the stones), fish and chicken in the middle tier, delicate or fast-cooking items on top — skipping this staging causes dense starches to remain raw while proteins overcook
- Layered individual leaf wrapping
- Each food parcel is wrapped in multiple leaf layers to contain steam and prevent charring; unwrapped food touching hot stones burns on contact while the interior stays raw
- Oven sealing and undisturbed rest
- Once covered with leaves, coconut fronds, and earth, the oven must not be opened until the cook is complete; every opening vents critical steam, extends cook time unpredictably, and produces uneven doneness across the spread
- Post-uncover resting
- Food continues cooking in residual leaf-heat after uncovering; taro and breadfruit served immediately after exposure are gummy; a short rest allows the starch to set

- Using limestone or sedimentary stones, which can explode when superheated

- Treating it as a single dish rather than a multi-food feast format and attempting a kitchen-oven replica
- Applying coconut cream directly without leaf buffering, causing it to burn at stone contact
- Serving taro and breadfruit immediately after uncovering without a brief rest, resulting in gummy, under-set starch
Provenance
Earth-oven feasting is one of the oldest attested culinary practices in Oceania, with archaeological evidence from Lapita culture sites across the Pacific dating to at least 1000 BCE. The terms 'Uhmw' and 'Ahu' are associated specifically with the Caroline Islands and Federated States of Micronesia, but the underlying technique is a common Austronesian inheritance shared across Polynesia, Melanesia, and Micronesia from the original Pacific dispersal. No single island group holds exclusive claim to the practice, and parallel development likely occurred across multiple archipelagos after settlement.
