Substitutions
Mutton → Beef or chickenadmissible
Meat is interchangeable across households
Egg coating → No eggadmissible
Patties hold from the dal; egg only adds a coating
Chana dal → Breadcrumbsinadmissible
Loses the characteristic dal-bound texture and flavor — no longer a true shami kebab
Common mistakes
- Skipping the chana dal and using breadcrumbs instead
- Not grinding the meat fine enough, leaving the patties crumbly
- Using too-wet a mix so patties fall apart while frying
- Confusing it with chapli kebab (a different, coarse minced kebab)
