Sheer Khurma
Also: sheer khorma, shir khurma
A festive vermicelli pudding of fine roasted seviyan simmered in sweetened milk with dates, nuts and aromatics, eaten especially on Eid morning.
Identity criteria
- 1Built on fine wheat vermicelli (seviyan/sevai), not rice or semolina
- 2Cooked in milk reduced to a fragrant, lightly thickened consistency (not a stiff halwa)
- 3Sweetened and studded with dates — the name literally means 'milk with dates'
- 4Perfumed with cardamom and often saffron, rosewater or kewra
- 5Generously enriched with ghee-fried nuts (almonds, pistachios, cashews)
- 6A celebratory sweet bound to Eid al-Fitr and Eid al-Adha

Technique
- Toasting vermicelli in ghee
- Roasting the seviyan to golden develops nutty flavor and stops it turning to mush in the milk
- Slow milk reduction
- Simmering thickens and concentrates the milk into a creamy, rich body characteristic of the dish
- Frying nuts and dates in ghee
- Blooms their aroma and adds the textural contrast that defines the pudding

Substitutions
Dates → Extra sugar or raisinsinadmissible
Removing dates loses the dish's defining ingredient and its name
Wheat vermicelli → Rice or semolinainadmissible
That makes kheer or sooji halwa, not sheer khurma
Saffron → A pinch of turmeric for color or omitadmissible
Saffron is optional aromatic
Whole milk → Evaporated/condensed milkadmissible
Adjusts richness and sweetness but keeps the dish
Common mistakes
- Not roasting the vermicelli, leaving it pasty and bland
- Boiling milk too fast so it scorches instead of slowly reducing
- Skipping dates, which removes the dish's namesake ingredient
- Over-thickening into a halwa rather than a pourable-to-creamy pudding
