In Nigerian and broader West African cooking, liver, kidney, and gizzard are prepared as a trio — often labelled 'assorted' alongside ponmo and shaki. Each organ requires a distinct approach: liver is diced into large cubes (it cooks fast and becomes grainy if overdone); kidney is halved, the white core removed, and sliced; gizzard is split open, the inner lining stripped, and the tough muscle halved or quartered. All three are typically parboiled before entering a soup or stew.

How to cook it

  1. 1LIVER: Rinse and pat dry. Remove any visible bile duct (green-tinged membrane at one edge) by slicing it away. Cut into 3–4 cm cubes — do not cut smaller or they will disintegrate. Add to the pot in the final 5–7 minutes only.
  2. 2KIDNEY: Halve each kidney lengthwise to expose the white fat core (renal pelvis and ureter). Cut out the white core entirely with a V-cut or spoon-scoop. Slice the remaining shell into 1 cm strips. Soak briefly in cold salted water (10 minutes) to draw out residual blood, then parboil in fresh water for 10 minutes before adding to the pot.
  3. 3GIZZARD: Slice each gizzard in half through the equator to expose the inner cavity. Peel away the yellow inner lining (koilin membrane) — it lifts easily once cut. Trim away any attached greenish bile or grit. Quarter each half for soups, halve for stews. Parboil for 20–30 minutes until firm but yielding before adding to the main pot.
  4. 4Combine all three in the pot only at the stage that suits the slowest cooker — gizzard first (20 min before done), kidney midway, liver last.
  5. 5Season the parboil water aggressively: onion, seasoning cube, ginger, garlic. The parboil liquid can be strained and used as a stock base.

Prep & butchery

  • Bile duct removal from liver is essential — even a small green patch imparts a sharp bitterness that ruins an entire pot.
  • Gizzard inner lining: if it resists peeling, score it in a crosshatch and it will lift cleanly.
  • Kidney soaking in salted cold water is optional but effective at reducing the assertive mineral flavour some diners find overpowering.
  • All three organs are highly perishable — use within 24 hours of purchase or freeze immediately.

Substitutes

  • Turkey gizzard

    Larger than chicken gizzard, needs 45+ minutes parboil; identical cleaning method.

  • Lamb kidney

    Smaller and more delicate than goat kidney; halve the soaking time.

  • Duck liver

    Richer and fattier than chicken liver; reduce portion size and cooking time slightly.

Notes

Sequencing is everything

The most common mistake when making assorted pepper soup is adding all three organs at the same time. Gizzard requires 25–35 minutes of cooking; kidney 12–15; liver only 5–7. Adding them simultaneously produces leathery liver and undercooked gizzard. Stagger entry times working backward from the desired serving moment.

Goat vs. chicken

Goat kidney and liver are both larger and more intensely flavoured than their chicken counterparts. Goat liver in particular has a deeper, earthier character that some cooks consider superior in a palm oil stew; chicken liver is milder and better suited to pepper soup where the spice should be the star.
