Allemande
Sauce allemande · A classical French derivative of velouté, enriched and bound with a liaison of egg yolks and cream, finished with lemon juice. Distinguished from simple cream sauces by its use of a pre‑existing blonde roux‑based stock sauce as its foundation, giving it depth absent in egg‑thickened creams alone. The name refers to its German origin — thick, enriched, and finished bright.

The formula
1 L velouté : 3 yolks : 125 ml cream + lemon
Liaison = 10–20 % of finished sauce by volume. 1 yolk ≈ 40 ml cream is reliable; scale to pot. Finished sauce should coat a spoon heavily. Yields ≈1.1–1.2 kg depending on liaison size.

Techniques that matter
Tempering
The essential technique for incorporating eggs into hot liquids safely. Without proper tempering, the yolk protein denatures rapidly, scrambling into visible fragments and breaking the emulsion. This is the defining skill of the sauce.
Liaison construction
A classic binding agent of egg yolk and cream. The fat droplets from cream are coated in lecithin from the yolk, creating a stable emulsion that carries and thickens the sauce simultaneously. The ratio of yolk to cream (roughly 1:3 by volume) balances richness with binding power.
Spoon test (nappe)
The sauce is done when it coats the back of a spoon heavily and a finger drawn through leaves a clean channel. This indicates sufficient gelatin and liaison set.
Deglaze reduction for base (mise en place)
If building from scratch, the velouté must be properly reduced before the liaison — this is not a step to rush. The blonde roux provides foundational body that makes allemandes more substantial than simple egg‑enriched creams.

Allemande au beurreFrench Classical
Finished with whole butter (monter au beurre) for extra gloss and richness. Adds sheen and a final emulsification layer after the liaison.
Sauce SuprêmeFrench Classical
Chicken velouté finished with chicken glaze (glace de volaille), cream liaison, and mushroom essence. The most refined member of the family; used for chicken dishes.
Sauce NantuaFrench Classical
Fish velouté (or white wine + fish stock base) finished with crayfish butter and cream. Classic for poisson en papillon or poached fish.
Sauce ParisienneFrench Classical
Chicken or fish velouté with mushroom trim, tarragon, and sometimes oysters. Represents the garnish‑heavy tradition of 19th‑century French cuisine.
Sauce au beurreGerman tradition
A simplified German‑influenced cream sauce — essentially a velouté enriched with butter, without the egg liaison. Lighter and quicker; less classical depth.

Substitutions

Troubleshooting
Sauce breaks or scrambles (curds visible)
Liaison added too hot, or reheated above 90 °C. Temperature exceeded the yolk’s coagulation threshold, destroying the emulsion and denaturing proteins irreversibly. → If caught immediately, remove from heat, whisk in a tablespoon of cold cream or water rapidly. If broken beyond recovery, start over — there is no stable repair for scrambled liaison. Prevent by using a thermometer and never boiling.
Sauce is too thin despite liaison
Velouté base was under‑reduced, or liaison was too small relative to the volume. A thin base cannot be rescued by the liaison alone — the ratio of thickening agents matters. → Reduce the sauce further over gentle heat, or add a small additional liaison (1 yolk + 30 ml cream) tempered and incorporated carefully. Test consistency with the spoon.
Sauce tastes flat or lacks depth
Velouté was made from insufficiently reduced stock, or stock itself was weak. The liaison cannot create flavor that was not present in the base — it only enriches what is there. → Reduce the finished sauce briefly to concentrate flavors, or finish with a small addition of cold butter whisked in (monter au beurre) for richness and gloss.
Sauce is too rich or cloying
Too much cream in the liaison, or too much liaison overall. Fats need acid and salt to balance; richness without balance reads as heavy, not refined. → Add lemon juice gradually, taste after each addition. A squeeze of fresh lemon or a splash of white wine vinegar can restore balance without undoing the sauce.
