sauce béarnaise · A derivative of hollandaise, béarnaise is a warm oil‑in‑water emulsion of clarified butter and egg yolks, stabilized by an aromatic reduction of white wine, white wine vinegar, shallot, tarragon and black pepper, finished with fresh herbs. It belongs to the butter‑mother family and is the paradigmatic example of a hot emulsified sauce.

The reduction replaces the plain acid of classic hollandaise; it must be cooled to warm (40–50 °C) before whisking into the yolks. Clarified butter is held at 60–65 °C for incorporation—well above the emulsion’s melting point but below the 70 °C coagulation threshold of the yolks.

Method
- 1Combine white wine, white wine vinegar, minced shallot, cracked peppercorns and tarragon stems in a small saucepan. Bring to a boil, then reduce heat and simmer until the liquid reduces to approximately 2–3 tablespoons (~30–45 ml). Strain through a fine‑mesh sieve, pressing solids to extract all liquid. Discard solids and cool the reduction to warm (40–50 °C).The reduction concentrates flavor, dissolves peppercorn aromatics, and creates an acidic aqueous phase compatible with the yolks—the foundation of béarnaise’s flavor complexity.
- 2Combine egg yolks and the cooled reduction in a stainless‑steel bowl or the top of a double boiler. Whisk vigorously until the mixture is slightly thickened and falls in a ribbon from the whisk—about 1–2 minutes.Yolks must be fully incorporated with the reduction before heat is applied; this pre‑thickening ensures a stable emulsion base.
- 3Set the bowl over barely simmering water (water should not touch the bowl). Whisk constantly in a steady, circular motion while heating the yolk mixture to 63–65 °C. The mixture will thicken noticeably and reach the consistency of a thin sabayon—it should coat the back of a spoon but still flow.Cooking the yolks to this temperature range denatures some proteins, improving emulsification capacity while staying well below the 70 °C coagulation threshold. Constant agitation prevents uneven heating and graininess.
- 4Remove the bowl from the heat. Add the warm clarified butter (60–65 °C) in a very thin, steady stream while whisking continuously and rapidly. Start with a few drops to establish the emulsion, then pour in a slow trickle.Controlled butter addition allows each droplet to be fully encapsulated by yolk lecithin before the next is added. Rushing causes fat droplets to coalesce and the sauce to break.
- 5Continue adding butter until the sauce reaches a light, pourable consistency—approximately all 500 g for 3 yolks. If the sauce becomes too thick, thin with 1–2 teaspoons of warm water or additional strained reduction.Béarnaise should flow like a thick cream, not be a solid paste. Consistency is controlled by the fat‑to‑yolk ratio and the temperature of the butter.
- 6Pass the finished sauce through a fine‑mesh strainer into a clean vessel. Fold in the remaining fresh tarragon chiffonade and chervil. Season with salt and white pepper. Hold in a warm place (55–60 °C) or in a thermos.Straining removes any coagulated yolk particles or herb fragments. Fresh herbs are added off‑heat to preserve their volatile aromatics. Serving temperature should be warm—above 70 °C risks breaking.

Emulsification (hot)
Béarnaise is a classic oil‑in‑water emulsion: butter droplets are suspended in a continuous aqueous phase of cooked yolk proteins. Lecithin and egg‑protein complexes reduce surface tension, stabilizing the dispersion.
Reduction (aromatic)
Reducing wine, vinegar and aromatics concentrates flavors and creates a flavored acidic liquid that replaces plain lemon juice in classic béarnaise, adding depth beyond mere acidity.
Sabayon technique
The preliminary whisking of yolks with the reduction over heat mimics the sabayon method—aerating and thickening the yolk phase before fat incorporation. This pre‑thickening creates a more stable emulsion matrix.
Temperature management
Butter must be warm enough to stay liquid but not so hot that it destabilizes the emulsion. Yolks must not exceed 70 °C. Once built, the sauce is held just above its melting point to remain fluid without further cooking.

Troubleshooting
Sauce breaks or curdles during butter incorporation
Butter added too quickly, or yolks were too cold when butter was introduced; also caused by butter temperature being too high. → If broken, whisk 1 tbsp cold water into a clean bowl, then slowly whisk in the broken sauce drop by drop until it re‑emulsifies; or start fresh with a new yolk and add the broken sauce to it as you would butter.
Sauce is too thick or stiff
Butter added too quickly or sauce cooled below serving temperature, causing the emulsion to solidify. → Place the bowl over the bain‑marie and whisk in 1–2 tsp warm water or additional reduction, heating gently to 60–65 °C while whisking until fluid again.
