brioche · An extraordinarily rich French yeast dough distinguished by a minimum 50% butter content (by flour weight) and whole eggs as primary liquid. The butter is introduced cold via the détrempe method, creating a laminated structure that yields a tender, deeply golden crumb with a fine, slightly aerated texture. It is the foundation for virtually all French breakfast pastries, enriched breads, and many classic batters.

Method

- 3Increase to medium speed. Knead 8-12 minutes until dough is smooth, supple, and pulls away from the bowl — a rough windowpane should form when stretched thin.Full gluten development is critical. Brioche is extraordinarily soft; underdeveloped gluten cannot support the fat, causing collapse and a greasy crumb.
- 4With mixer running on low, add cold butter one piece at a time, waiting for each piece to fully incorporate before adding the next. Continue kneading 6-8 minutes after last addition until dough is smooth, glossy, and cohesive — it will feel like soft Play-Doh and will not stick aggressively.Incorporating cold butter creates the laminated structure: butter layers within gluten sheets. - 5Scrape dough into a lightly oiled container. Cover. Bulk ferment 45-60 minutes at room temperature (24°C), then refrigerate 12-24 hours.Room-temperature rise establishes fermentation. The long cold proof is the defining brioche technique: it develops flavor depth, allows gluten to relax (reducing stickiness for shaping), and prevents the butter from overheating the dough during handling.
- 6Portion, shape, and place in molds. Proof 1.5-2 hours at room temperature or 75 minutes at 30°C until dough is puffed, springy, and wobbles like jelly when the mold is tapped.Final proof builds the aerated, honeycomb crumb. Underproofing yields a dense interior; overproofing causes collapse during baking.
- 7Brush gently with egg wash (1 egg + 1 tbsp cream or milk). Bake at 175-180°C (350-355°F) with steam for the first 10-12 minutes. Remove steam. Continue until deep golden brown and internal temperature reads 93-95°C (200-203°F).Egg wash applied gently prevents degassing while providing shine and mahogany color. Initial steam keeps the crust flexible for maximum oven spring; removing it allows browning.
Techniques that matter
Détrempe (starter dough)
The classical brioche method: create a lean dough first, develop gluten, then incorporate fat. This produces cleaner lamination than creaming butter and sugar from the start.
Autolyse
Mixing flour and liquid and resting 20-30 minutes before adding yeast reduces mixing time and improves gluten extensibility, critical for this very sticky dough.
Cold-butter incorporation
Butter at 16-18°C is firm enough to remain in discrete layers within the gluten matrix. This creates the laminated, flaky-tender crumb. Warmer butter greases the gluten, preventing proper structure.
Controlled cold fermentation
Refrigerating the dough 12-24 hours after bulk rise develops complex flavor (fermentation byproducts), relaxes gluten (easier shaping), and keeps the butter firm (essential for lamination).

Brioche shaped as a loaf in a long mold. The same formula but portioned differently. Classic presentation: a log of small individual portions proofing side by side.
Brioche à têteFrance
The iconic tall, mushroom-shaped roll with a smaller ball of dough tucked on top. Richer formula (up to 80% butter). The 'tête' was historically baked in a fluted mold; the form creates maximum crust-to-crumb ratio.
Brioche parisienne (brioché)Paris, France
Leaner version: 20-30% butter. Lighter, more bread-like, used for sandwiches and toasts. Closer to an enriched bread than a pastry dough.

Brioche des RoisProvence, France

Troubleshooting
Butter leaking during baking (pools of fat on the pan)
Butter was incorporated too warm, or the dough was proofed too long/warm, or the butter wasn't cold enough when mixed. The fat has melted and separated from the gluten structure before the dough set. → Ensure butter is 16-18°C when added. After mixing, refrigerate dough immediately if not going to bulk ferment. If butter leaks mid-bake, reduce oven temperature to 165°C (325°F) and tent loosely with foil to finish baking the interior without further fat migration.
Dense, heavy crumb with no honeycomb aeration
Underproofed — the final rise was insufficient. The gluten was not inflated with CO₂ and steam before the structure set. Also caused by over-kneading after butter addition, which destroys the lamination. → Allow proper final proof: dough should wobble visibly like set gelatin when the mold is tapped. The finger-dent test should spring back slowly, not completely. If over-kneaded, start fresh — this cannot be corrected.
Tight, crumbly, tough texture
Insufficient gluten development before butter was added (the lean-dough stage was rushed), or too much flour was worked in during shaping. Also caused by insufficient fermentation — the long cold rest develops flavor and relaxes gluten. → Knead the détrempe until a visible windowpane forms before adding butter. Do not skip the cold fermentation. When shaping, use minimal flour and handle gently.
Crust forms before the interior is set (top burns, center raw)
Oven temperature too high, or the dough was underproofed so the interior had not yet reached full expansion when the crust set. Also from inadequate steam in the first minutes of baking. → Bake at 175-180°C (350-355°F), not higher. Provide steam in the first 10-12 minutes by placing a pan of water on the oven floor or using the steam-injection function. Ensure final proof is complete before baking.
