charlotte cream
crème à la charlotte · A French dessert cream consisting of crème pâtissière (egg-yolk-and-starch custard) lightened by folding in an equal weight of Italian meringue or stiffly whipped cream. The result is a stable, mousse-like cream that holds its shape when piped or spooned, neither weeping nor collapsing. It is the canonical filling for baked and unmolded charlottes, and a foundational component of many French entremets and bavarois.

The formula
1:1 by weight
Crème pâtissière : Italian meringue (or stiff cream). 1 kg total yields: 500 g custard + 500 g meringue. Scale by the gram; do not scale by volume. For whipped-cream variant, same 1:1 ratio by weight.
Identity
- The custard base is fully cooked — starch fully gelatinized, no raw-flour taste or graininess on the tongue.
- The meringue (or cream) is folded in gently; the final cream holds soft peaks and a ribbon trail when dropped from a spoon.
- The ratio of base to lightening agent is 1:1 by weight — the single non-negotiable that governs texture, stability, and yield.
- The cream is served cold; it is not cooked again after assembly.
- Vanilla is the dominant, customary flavoring; other aromatics (coffee, chocolate, citrus zest) are variations, not the foundation.

Method
- 1Make crème pâtissière and cool it to 35–40 °C.Hot custard will deflate the meringue on contact. The base must be below 40 °C before folding, but still fluid enough to pour cleanly.
- 2Make Italian meringue: cook sugar syrup to 121 °C while whipping 4 egg whites (+ 2 g cream of tartar) to very soft foam, then stream the syrup in a thin stream with the motor running. Continue whipping until cooled to blood-warm (~35–40 °C) and glossy.Syrup at 121 °C is the soft-ball stage; it cooks the whites while the hot stream pasteurizes them. Whipping to full cool gives maximum volume and stability.
- 3Weigh both components. Combine in one batch: pour the cooled crème pâtissière over the Italian meringue.Weighing ensures the sacred 1:1 ratio. Pouring over the meringue (rather than scooping meringue into custard) distributes the lighter phase more evenly on first contact.
- 4Fold with a large rubber spatula using wide, deliberate strokes: cut through the center, turn the bowl a quarter turn, sweep the bottom over the top. Stop as soon as streaks disappear and the ribbon falls in a continuous sheet.Over-folding collapses the meringue's air cells. The cream is done when a ribbon dropped from the spatula holds briefly before dissolving — a sign of a stable, aerated structure.
- 5Use immediately or press a film of plastic wrap directly onto the surface, refrigerate at 2–4 °C, and use within 24 hours.Plastic directly on the surface prevents skin formation and syneresis. Charlotte cream is not a holding item; its foam degrades over 24–36 hours.
Techniques that matter
Starch gelatinization
The crème pâtissière relies on potato and wheat starch to thicken the egg-milk base. Starch must reach ~95 °C to fully gelatinize; undercooked starch leaves a raw, chalky texture.
Egg-white coagulation / foam formation
Italian meringue is a stable foam: sugar syrup coagulates egg proteins and raises the foam's boiling point, creating a smooth, dense, heat-stable structure unlike a French meringue.
Gentle incorporation / mousse construction
Folding (not whisking) preserves the entrained air in the meringue. This is the fundamental technique of every mousse and charlotte cream — the structural basis of French entremets.
Tempering (custard base)
Hot milk is ladled into the yolk-starch mixture in stages to raise temperature gradually, avoiding the scrambled-egg effect of sudden heat.
Variations & derivatives
crème chiboustFrance
Uses Italian meringue (same as charlotte cream) but with a thin crème anglaise base enriched with gelatin. Slightly more liquid; considered the precursor to charlotte cream.
crème légère (au café, au chocolat)France
Crème pâtissière lightened with Italian meringue and a flavoring (coffee, chocolate). Technically a charlotte cream by ratio; marketed under the lighter name.
crème forcée / crème fouettéeBelgium
Very stiff crème pâtissière folded with an equal weight of very cold, heavily whipped cream. Denser than standard charlotte cream; used in prismic charlottes.
bavarois (Bavarian cream)France
Crème anglaise (egg-yolk custard, no starch) lightened with Italian meringue and set with gelatin. Shares the 1:1 fold-in principle but uses a liquid base and sets firmly.

Substitutions
- Italian meringue → stiffly whipped cream (35% fat) — Drop-for-drop substitution at the same weight (1:1). Produces a softer, sweeter cream; texture is noticeably different and shelf life drops to same-day use only.
- potato starch → cornstarch (maïzena) — Cornstarch is interchangeable weight-for-weight with potato starch in crème pâtissière; it produces a slightly more opaque result.
- vanilla → orange blossom water or coffee extract — Flavoring is the variable element of charlotte cream; the 1:1 ratio and the custard-meringue structure remain unchanged.
Troubleshooting
Grainy, chalky texture in the finished cream
Starch in the crème pâtissière was undercooked or the custard was not brought to a full boil and held for 1–2 minutes. → Return the custard to the heat, bring to a hard simmer while whisking, cook for 2 minutes. Pass through a fine-mesh strainer before folding in the meringue.
Cream collapses or weeps liquid after assembly
Meringue was under-whipped (too soft) or the custard was still too hot (>45 °C) when folded, deflating the foam. → Whip meringue to firm, glossy peaks with the bowl noticeably warm to the touch. Cool custard to 35–40 °C before combining.
Tight, dense final texture — no ribbon
Meringue was over-whipped to a dry, stiff stage before folding; the structure is over-coagulated and does not aerate the cream. → Italian meringue should be glossy and billowy, not dry or clumping. Whip whites only to the soft-peak stage before adding syrup; the syrup will stabilize and firm the foam further.
Cream separates or curdles after 12+ hours in fridge
Excess moisture in the custard base (too much milk relative to starch) or natural degradation of the foam structure over time. → Charlotte cream is not a long-hold item. Use within 24 hours. If the base was loose, increase starch by 5–8% in the crème pâtissière (33 g starch per 500 g milk instead of 30 g).
