Emulsions
Citrus Vinaigrette
A temporary oil-in-water emulsion in which citrus juice provides the acidic aqueous phase forcibly combined with a fine-droplet fat and a small amount of mustard as co-emulsifier. Unlike long-life emulsions stabilized by egg yolk, the citrus vinaigrette relies on surfactants in mustard and citrus peel oil to hold the dispersion briefly. It is a quick, lively dressing whose brightness makes it the standard finish for raw fish, delicate greens, avocado, and grilled shellfish.

The formula
3 : 1
3 parts oil to 1 part citrus juice by volume. Zest and aromatics are additions measured by weight. Mustard emulsifier: 5–8% of oil weight (approximately 1 tsp per 100 g oil).

Method
- 1Combine citrus juice, zest, salt, and any shallot in a non-reactive bowl. Whisk until salt is fully dissolved.Salt must dissolve completely in the aqueous phase before emulsification begins. A reactive metal bowl will cause discoloration with citrus acid.
- 2Add the emulsifier (mustard, and/or honey) to the aqueous mixture. Whisk vigorously for 30 seconds.Dispersing the emulsifier into the continuous phase before adding oil allows it to lower interfacial tension throughout the aqueous volume.
- 3Add the oil in a slow, steady stream while whisking briskly with a fork, balloon whisk, or immersion blender on medium speed.Shear force must exceed the Laplace pressure of the droplets. A slow pour at constant shear creates fine, uniform droplets that remain suspended.
- 4Continue whisking for 30–60 seconds after all oil is incorporated until the vinaigrette is uniformly pale, slightly thickened, and does not separate on standing for 30 seconds.Continuing past oil addition allows surfactant molecules to fully coat droplet surfaces, reducing coalescence. The slight thickening indicates a workable droplet network.
- 5Taste and adjust: add acid drop-wise for brightness, a pinch more salt, a few drops of honey for roundness, or a thread of high-quality oil for richness.The emulsification process can mute or accentuate certain flavor compounds, so final seasoning is done after structure is formed.
Techniques that matter
Oil-in-Water Emulsification
The aqueous citrus phase is the continuous phase; oil droplets are dispersed within it. This determines pourability, mouthfeel, and behavior on food.
Surfactant-Mediated Emulsification (No Egg)
Mustard and citrus zest provide sufficient surface-active molecules to temporarily stabilize an oil-in-water emulsion without egg yolk. The absence of egg means no heat-stable protein film — hence the brief shelf life.
Aromatics Maceration
Macerating shallot, herbs, or zest in the acid for 2–5 minutes before emulsification allows water-soluble flavor compounds to partition into the continuous phase.

Lemon Vinaigrette (Classique au Citron)France, classic bistro
Lemon juice, lemon zest, Dijon mustard, grapeseed oil, white pepper. The canonical base from which most citrus vinaigrettes derive. Served over salad verte, sole meunière, or avocado.
Blood Orange and Rosemary VinaigretteItaly (Sicily, Campania)
Blood orange juice, blood orange zest, a sprig of fresh rosemary steeped 10 min in warm oil then strained, Dijon. The anthocyanin pigment gives an intense crimson color. Paired with roasted beets or burrata.
Lime-Cilantro VinaigretteMexico, California
Lime juice, lime zest, fresh cilantro leaves (blanched briefly to reduce bitterness), honey, grapeseed oil. Classic dressing for fish tacos, ceviche, or jícama slaw.

Substitutions
- Dijon mustard → Whole-grain mustard — Provides the same lecithin surfactant and slightly more texture. Use at same weight. Flavor becomes more assertive with visible seeds.
- Dijon mustard → Liquid lecithin (powdered soy or sunflower lecithin) — Dose at 1–3% of oil weight. Creates a cleaner citrus flavor without mustard character. Mix into the oil phase before adding to acid.
- Citrus juice → White wine vinegar or Champagne vinegar — Vinaigrette is still emulsified but no longer a citrus vinaigrette. Acid profile shifts from fruity-citric to sharp-acidic. Add citrus zest and a drop of citrus essential oil to restore aromatic character.changes result
- Grapeseed oil → Extra-virgin olive oil — Vinaigrette will emulsify. Color shifts from pale yellow to green-gold. Flavor changes dramatically. Acceptable when richness is desired; not acceptable when citrus brightness is the point.changes result
- Honey → Agave nectar or simple syrup — All function as humectant sweeteners. Honey adds its own floral note; agave is neutral. At same weight they are functionally equivalent in the emulsion.
Troubleshooting
Emulsion separates into two layers within 2–3 minutes
Insufficient emulsifier relative to oil volume. Mustard dose too low, or emulsifier not fully dispersed before oil addition. → Whisk 1 tsp mustard into 2 tbsp already-separated vinaigrette, then stream in remaining oil slowly while whisking. Or use an immersion blender for 30 seconds.
Vinaigrette is too thin and watery
Too much aqueous phase — oil-to-acid ratio below 2:1. The continuous phase overwhelms the dispersed oil droplets. → Whisk in additional oil in small additions (5 g at a time) until desired body is achieved. Alternatively, reduce citrus juice by weight in the next batch.
Vinaigrette is too thick and pasty
Oil-to-acid ratio above 5:1, or emulsifier dose too high. Dispersed oil phase becomes too concentrated and droplets pack tightly. → Add acid (citrus juice or white wine vinegar) a few drops at a time, whisking, to thin. The emulsified structure will remain largely intact.
Vinaigrette turns bitter after standing
Oxidation of citrus zest essential oils (limonene) forming bitter compounds over 2+ hours, or excessive mustard creating sulfur compound polymerization. → Use within 4 hours for best quality. If prepared in advance, store zest separately and add only at service. Blanching zest in boiling water for 10 seconds deactivates oxidative enzymes.
