Maltaise
Sauce Maltaise · A derivative of hollandaise sauce fortified with a reduction of malt vinegar, traditionally finished with orange zest. The sauce takes its name from the malt vinegar (vinaigre de malt) that defines its character and is the canonical sauce for asparagus.

The formula
3 yolks : 250g clarified butter : 50g malt vinegar reduction
Scale by yolk: 1 yolk emulsifies ~80g butter. For 3 yolks (~45–55g) use 250g clarified butter. If using whole eggs, increase to 4–5 eggs per 250g butter. Reduction: reduce 100g malt vinegar (optional shallot) to ~50g syrup. Finish with zest of ½ orange.

- Egg yolk provides lecithin emulsifier — hollandaise is impossible without it.

Method

- 5Once all butter is incorporated and sauce is glossy and full-bodied, add the warm (not hot) malt vinegar reduction and orange zest. Hollandaise is a temporary oil‑in‑water emulsion where lecithin in yolk coats fat droplets, suspending them in water.
Yolk coagulation control
Egg protein coagulation begins ~65°C and completes ~70°C. Keeping sauce between 60–65°C achieves thickening without irreversible curdling — the critical temperature window.
Bain‑marie cooking
Indirect steam heat provides the gentle, even warmth required for yolk thickening without hot spots that cause immediate coagulation.

Troubleshooting
Sauce breaks (fat separates, grainy texture)

Sauce is too tight or appears scrambled
Excessive heat; yolks cooked before sufficient butter was added to buffer temperature. → Cannot be reversed. Start fresh. Use a probe thermometer to monitor yolk mixture — never exceed 65°C.
Sauce lacks maltaise character
Insufficient reduction — vinegar was not cooked enough, diluting the malt flavor; insufficient zest; reduction added too early and cooked off aromatics. → Add a touch more reduction or a pinch of malt powder. Ensure zest is added after removing from heat.
