Quiche Custard / Royale
Crème à quiche · A poured egg-and-cream custard used to fill blind-baked tart shells before baking. The benchmark of egg‑coagulation cookery: enough egg protein to set firmly, enough cream fat to stay tender and lush. Royale denotes the same preparation baked in individual ramekins as a first course.

The formula
1 egg + 1 yolk : 125 ml cream
For one 23–25 cm tart: 3 eggs + 3 yolks (≈330 g total) whisked with 400 ml cream (≈412 g), seasoned with ~3 g salt and a pinch of nutmeg. Volume ratio egg : cream ≈ 1 : 1. For a lighter set: 3 eggs only, 500 ml cream. For richer royale in ramekins: add 1 extra yolk per portion.

Straining the custard
Removes chalazae and any coagulated egg particles that would mar the silky, smooth face of the finished quiche.
Pre‑cooking and draining fillings
Raw fillings (especially bacon fat, onions, or greens) introduce excess moisture that dilutes the custard ratio, weakens the set, and causes weeping.
Egg‑fat emulsion control
Egg yolk lecithin emulsifies cream fat into the protein network, creating a stable, creamy matrix. Over‑mixing after adding fat can break this emulsion; gentle folding of cold cream into egg is sufficient.
