tare
タレ · A reduced, sweet-savory Japanese seasoning liquid made from soy sauce, mirin, and sake (with optional sugar or dashi), used for basting grilled and roasted foods or as a finishing sauce. Tare is the foundational un-reduced seasoning blend; when cooked down it becomes a lacquer-like glaze.

This 3:2:1 ratio is the classical professional starting point for yakitori tare. Reduce by 20-30% for basting consistency, fully for thick glaze. Osaka-style (Kansai) adds dashi for subtler depth; sweeter applications increase mirin or add sugar.

Mirin contains oligosaccharides and glucose that resist crystallization, giving tare its smooth, non-grainy viscosity without requiring added starch.
Reduction (concentration)
Simmering removes water and alcohol from sake, concentrating flavor compounds 2-3× and developing the syrupy body necessary for proper food adhesion.

Troubleshooting
Tare crystallizes or becomes gritty after storage
Excessive reduction with too much sugar; sugar crystallization on cooling → Reheat gently with 1-2 tbsp water to dissolve; do not exceed original reduction level; store with a thin film of tare covering surface to prevent evaporation crystallization
Bitter taste in finished tare
Over-reduction or high heat during cooking; mirin and sugar burned rather than caramelized → Discard and start fresh; once bitter compounds form (hydroxymethylfurfural), they cannot be neutralized. Cook below gentle simmer, stir frequently.
Tare doesn't adhere to protein during grilling
Insufficient reduction; too watery; protein surface too hot → Tare needs viscosity to cling; protein must be just below searing temperature when tare is applied (around 150-160°C) so it can polymerize rather than slide off.
