teriyaki glaze
照り焼きソース · A reduced soy-based sauce fortified with mirin and sugar that achieves a glossy, lacquer-like finish when applied to grilled or broiled proteins. Unlike a thin basting sauce, a true teriyaki glaze is thick enough to cling to surfaces and develops a subtle caramelized crust. The name derives from teri (shine/luster) and yaki (grilled).

The formula
1:1:½ soy : mirin : sake, sugar ≈ liquid weight, reduce 50%
Equal parts soy and mirin, sake at half; sugar roughly equals total liquid weight. For 500 g yield: 180 g soy, 180 g mirin, 90 g sake, 180 g sugar. More sugar = thicker glaze; more mirin = more shine. Honey or light brown sugar substitute 1:1 for white sugar.

Troubleshooting

Glaze tastes harsh or overly salty
Soy proportion too high; or too much reduction → Balance with additional mirin (1 tbsp) and a small amount of sake or water. A pinch of salt (sounds counterintuitive but actually rounds bitterness).
