Cream Liqueur
Silky, sweet cream liqueur for sipping and coffee
Smooth and dessert-sweet, cream liqueur sips over ice, laces a coffee, and enriches a boozy milkshake. Being dairy-based, it must stay cold once opened.
Cream liqueur is a smooth, opaque blend of dairy cream, spirit (often Irish whiskey), sugar, and flavorings like chocolate, vanilla, and coffee — Baileys is the archetype. It tastes like a boozy, lightly chocolatey caramel milkshake and pours like thin cream. Because it's emulsified dairy, it behaves differently from clear liqueurs in the kitchen: it enriches and sweetens rather than just flavoring, making it perfect for desserts — cheesecakes, mousses, ganache, ice cream, bread pudding, and spiked coffee. Treat it as a flavored cream with a kick.

How to use in cooking
Cream liqueur adds richness, sweetness, and flavor in one pour, so it's ideal in desserts where you'd use cream anyway. Beat it into cheesecake batter, fold it into mousse or whipped cream, melt it into chocolate ganache or truffles, churn it into ice cream, or pour it over bread pudding. It also makes a luxurious spiked coffee. Avoid boiling it hard or combining with strong acids (citrus) — the dairy can split.
How to store
Unlike clear spirits, cream liqueur contains dairy and will eventually spoil. Keep it refrigerated after opening and use within about six months. If it smells off or has thickened/curdled, discard it. Don't pair it raw with acidic juices, which can curdle the cream.
Common uses
Tips & pitfalls
- It's dairy — don't boil hard or mix with citrus, or it can curdle.
- Refrigerate after opening; it does eventually go off.
- Use it in place of some cream plus sugar in desserts.
- Melts beautifully into ganache and ice cream.
