Sago vs. Tapioca: Knowing the Difference

The most visible difference is size: tapioca pearls are often noticeably larger than sago pearls, and when cooked, tapioca tends to have a softer, more gelatinous bite. Sago pearls retain more structure and a slightly firmer chew. In Indian markets, sabudana refers to tapioca starch, not true sago. When a recipe specifically calls for sago, substituting tapioca will generally work in desserts but may produce a noticeably different texture. In savory or thickening applications using flour form, the difference is more subtle.
The Sago Palm and Sustainable Harvesting
The sago palm is remarkable in that it is a source of starch even as a living plant, unlike grain crops that must be harvested and replanted. The palms are typically harvested after 8–15 years of growth, just before they flower—when starch content is at its peak. - Add sugar only toward the end of cooking. Sugar added early causes the starch to toughen and significantly slows hydration of the pearls.
- For cold desserts or drinks, rinse cooked sago immediately with cold water after draining to stop the cooking process and keep the pearls distinct.
- Store uncooked sago away from strong odors—it absorbs neighboring flavors readily, which can ruin a delicate vanilla pudding.
- If sago pearls stick to the pot bottom and start to burn, do not stir the whole batch; discard and start fresh, as the scorched starch imparts an unpleasant flavor.
