Tempeh Fermentation

Incubating cooked soybeans with Rhizopus mold to bind them into firm tempeh cakes.

Tempeh fermentation inoculates cooked, dehulled soybeans with Rhizopus mold spores and incubates them warm for a day or two until a dense white mycelium knits the beans into a sliceable cake. This Indonesian process boosts protein digestibility and adds a nutty, mushroomy flavor. Proper airflow and temperature control are critical so the mold thrives without overheating or spoiling.

Tempeh fermentation is a solid-state fungal culture in which cooked soybeans are bound into a sliceable cake by the living mycelium of a mold — most often Rhizopus oligosporus. Unlike tofu, which is a protein precipitate held together by coagulation, tempeh is held together by biological growth: the white threads visible in a finished cake are not a coating but a structural web that knits thousands of beans into a single firm block. Originating in Java, where it has been made for centuries, tempeh is now produced worldwide both industrially and at home, prized for its dense nutrition, nutty-meaty flavor, and remarkable keeping qualities for a fresh, unprocessed food.

The process is aerobic and warm, requiring temperatures in the narrow band where Rhizopus thrives — roughly 30–32°C / 86–90°F — and oxygen throughout the mass. The mold does more than bind beans: it predigests soy proteins, breaks down phytic acid, and consumes the oligosaccharides (raffinose, stachyose) that make whole soybeans gassy and hard to digest. The result is a food that is more digestible than cooked soybeans themselves, with a meaty chew and a clean, mushroomy aroma when properly fermented.

Success depends on three things in tension: the beans must be cooked enough to feed the mold but not so soft they collapse, the surface must be dry enough to suppress competitors but not so dry the spores cannot germinate, and the temperature must stay in Rhizopus's comfort zone long enough — typically 30–36 hours — for full colonization before spoilage organisms take hold. Get those right and the difference between tempeh and a smelly mess is a matter of a few degrees and a few hours.

Types & varieties

Soybean tempeh

The classic; dehulled or split beans give a more tender, less bitter cake than whole-bean versions.

Mixed-grain tempeh

Soybeans combined with rice, barley, oats, or millet; looser bind, milder flavor, common among home fermenters.

Multi-legume tempeh

Soy plus chickpeas, black beans, lentils, or split peas; broader nutrition, slightly different texture.

Non-soy bean tempeh

Pure chickpea, fava, or black-eyed pea tempeh; softer crumb and needs more careful acidification since these lack soy's natural buffering.

Tofu-dreg tempeh (okara / tempe gembus)

Fermented soybean pulp left from tofu-making; lighter and more delicate, popular in West Java.

Wild-fermented tempeh

Inoculated from ambient molds (e.g., on hibiscus/waru leaves) rather than pure cultures; traditional but inconsistent.

How to do it

    Sort, rinse, and soak

    Pick over dried soybeans, discarding debris, broken beans, and stones. Rinse and soak in about three times their volume of cool, filtered (chlorine-free) water for 12–18 hours. Add 30 mL (2 tablespoons) of cider vinegar or food-grade lactic acid per liter of soak water to bring the pH down to roughly 5 — this is the single most effective defense against slimy Bacillus contamination later on.

    Hull and rinse

    Drain the soaked beans and rub them vigorously between the palms under running water; the thin seed coats float off and wash away. Dehulling is optional but produces a milder, more uniform cake and removes a major source of bitterness and microbial load.

    Parboil, do not fully cook

    Simmer the dehulled beans in fresh water for 30–45 minutes, until they are just tender when bitten but still hold their shape. Do not pressure-cook them to softness — over-cooked beans collapse, the surface starch gelatinizes into a barrier the mold struggles to penetrate, and the final cake turns pasty. Drain and rinse briefly with cool water to stop the cooking.

    Dry the surface

    Spread the hot beans on a clean towel-lined tray and pat dry, then continue to air-dry or fan them until individual beans look matte rather than glossy, ideally at around 30°C / 86°F. Surface moisture is the chief cause of off-smelling batches, because it lets competing bacteria outpace Rhizopus in the first hours.

    Inoculate with starter

    Sprinkle tempeh starter (Rhizopus spores on a rice-flour carrier) over the beans at roughly 1 g per kg of dry beans used — about a quarter teaspoon per kilogram. Toss and stir to distribute evenly. The beans should now be at or below 30°C / 86°F; if still hot, cool them further, since heat above roughly 40°C will kill the spores.

    Pack into perforated containers

    Spoon beans into small perforated bags (commercial tempeh bags, zip-bags pierced with a needle every 2 cm, or food-grade plastic with holes), banana-leaf packets, or glass or ceramic dishes loosely covered with foil. Pack to a thickness of 2–4 cm — thicker packs overheat at the center and under-ferment. Seal loosely; oxygen must reach the interior.

    Incubate at 30–32°C

    Hold the packed beans at 30–32°C / 86–90°F for 24–48 hours. Reliable warm spots include an oven with just the light on, a dehydrator set low, an insulated cooler with a seed-starting heat mat, or a yogurt maker. Begin checking every 6–8 hours after the first 18 hours.

    Watch for full bloom and finish

    White mycelial fuzz appears first at the inoculation points, then spreads across the surface and inward. The batch is done when the entire cake is white, firm to the touch, and the beans are bound into a sliceable block. Any ammonia odor, or pink, red, or jet-black coloration, signals contamination or over-fermentation; discard in those cases.

    Cool, store, or cook

    Fresh tempeh can be eaten briefly steamed, but most cooks refrigerate it for at least an hour to firm the texture and arrest further mold growth. Store refrigerated in a paper or loosely closed bag for up to a week, or slice and freeze for months. Always cook before eating — raw tempeh is dense, chalky, and harder to digest.

The biology in plain terms

Rhizopus oligosporus is a fast-growing filamentous mold that thrives in warm, slightly acidic, oxygen-rich conditions — almost the opposite of what most spoilage bacteria want. When the spores land on a moist but not wet bean, they germinate, send out thread-like hyphae, and begin to secrete enzymes that break down proteins, starches, and the cell walls of the beans themselves. The hyphae grow into and around the beans, eventually fusing the mass into a single mycelial mat. Two practical consequences: first, the mold needs oxygen all the way through the pack (which is why perforated bags are not optional), and second, the beans should be firm enough to maintain air pockets between them — overcooked, mushy beans collapse into an anaerobic paste where bacteria take over.

  • Rhizopus predigests soy protein into shorter peptides and free amino acids, which is why cooked tempeh is easier to digest than cooked soybeans.
  • The mold also reduces phytic acid and consumes raffinose and stachyose — the sugars responsible for soy's reputation for causing gas.
  • At the end of fermentation, the cake is alive. Refrigeration slows the mold; cooking kills it. Freezing preserves the cake almost indefinitely.

Troubleshooting common failures

Most tempeh failures fall into one of four categories, and each has a clear cause.

  • Slimy, sour, or ammonia-reeking batch: usually bacterial contamination from insufficient acidification, beans that were too wet on the surface, or temperatures that dipped low enough for Bacillus to outpace Rhizopus.
  • No growth after 36 hours: starter was old or stored warm, beans were too hot at inoculation (above ~40°C), or the incubator ran cooler than ~25°C.
  • White fuzz only on the surface, soft inside: pack was too thick, too tightly sealed, or the center ran out of oxygen; aim for a 2–4 cm layer and plenty of perforations.
  • Black pinpricks on a fully white cake: over-fermentation; the mold has begun producing sporangia. The cake is still safe but will taste bitter and darken on cooking.

Tips & pitfalls

  • Acidify the soak or cook water with 1–2 tablespoons of vinegar or lactic acid per liter; dropping the pH below about 5 is the single most effective defense against slimy, stinky Bacillus contamination.
  • Use filtered or dechlorinated water throughout — chlorine inhibits Rhizopus and can stall a batch in the first hours.
  • Dehull the beans by rubbing them between your hands in water (the skins float off); hulls inhibit mycelial penetration and carry much of the bean's microbial load.
  • Inoculate only when beans have cooled to about 30°C / 86°F; hotter beans kill the spores and you'll see no growth at all.
  • After boiling, drain thoroughly and towel-blot or air-dry the beans until they are matte, not glossy — excess surface water is the most common cause of failed batches.
  • Poke small holes in bags or use perforated containers every 1–2 cm; without airflow the center stays anaerobic and rots while the surface looks fine.
  • Smell-check at 12, 24, and 36 hours — a clean mushroom-floral aroma is good; ammonia, cheese, or alcohol odors mean spoilage and the batch should be discarded.
  • Stop incubation the moment the cake is firm and fully white; black pinpricks (sporangia) signal over-fermentation and the tempeh will turn bitter and dark on cooking.
  • Do not refrigerate during incubation — cold stalls the mold and favors bacteria; keep the fermenting mass in its warm box for the full 24–48 hours.
