Søren grew up above his family's bakery in Copenhagen's Nørrebro district, where lunch was never cooked so much as assembled: rye from downstairs, fish his father cured in the cellar, a garden's worth of dill and cucumber. He spent twelve years as a frokost cook layering open-faced sandwiches before deciding home cooks deserved the same calm, exacting method.
