An open-faced sandwich of roasted kale and potato rounds, finished with a cool sour cream and dill sauce. Clean, bright, and quietly satisfying.

Method
Wash the kale thoroughly under cold water. Pat dry with a clean towel. Strip the leaves from the tough center stems and tear the leaves into rough 5cm pieces. Set aside.
Scrub the potatoes under cold water. Peel if desired (Søren leaves the skin on for texture). Slice into rounds approximately 5mm thick.
Zest the lemon to yield about 1 teaspoon of fine zest. Cut the lemon in half and set aside for juicing.
Preheat the oven to 200°C. Line a large baking sheet with parchment.
Spread the kale in a single layer on one side of the prepared baking sheet. Arrange the potato rounds in a single layer on the other side, ensuring they do not overlap.
While the vegetables roast, combine the sour cream, chopped dill, lemon zest, and mustard in a small bowl.
Place the bread slices on a clean work surface. Toast under a grill or in a toaster until lightly golden, about 2 minutes per side. Let cool for 1 minute.
Arrange 4-5 potato rounds on each slice of toast, overlapping them slightly.
Drizzle 2 tablespoons of the sour cream and dill sauce over the top of each sandwich. Serve immediately, with extra sauce on the side if desired.

Allergen Warning
Mustard is an allergen present in this dish. Ensure guests are aware before serving.
Cross Contamination
Use separate utensils and cutting boards for the roasted vegetables and ready-to-eat components to prevent cross-contact.
Storage
Refrigerate the sour cream sauce promptly. Do not leave at room temperature for more than 2 hours.
Cooking Temperature
Roast vegetables at 200°C (400°F) until golden edges form on potatoes and kale is crisp. Ensure even cooking by flipping potatoes halfway.
High Risk Population
Sour cream contains dairy. For immunocompromised individuals or the elderly, ensure all dairy components have been properly refrigerated and are within shelf life.
Handling
When tossing kale with oil, ensure hands are clean. Massage gently to avoid tearing leaves unevenly.
Pro Tips
Technique
After tossing the kale with oil, massage the leaves between your palms for a full 30 seconds — this breaks down the cell walls slightly and ensures they crisp evenly rather than steam.
Substitution
Fresh dill may be replaced with dried dill weed, though use sparingly — about half the quantity, as the fresh herb's brightness is harder to capture in dried form.
From the chef
Above the bakery, lunch was never cooked so much as arranged — this is how I learned to think about open-faced sandwiches. The potato rounds here are borrowed from the new potatoes my mother pickled every spring, but roasted instead, with crisp kale to give it backbone. It is restraint that makes a smørrebrød sing: each layer clean, each flavor allowed to speak.
