Method
Peel, core, and dice the apple into small cubes, roughly 1 cm. Set aside.
In a large bowl, whisk together all-purpose flour, buckwheat, baking powder, salt, and sugar until evenly combined.
In a separate bowl, crack the eggs and pour in the whole milk. Add 2 tablespoons of melted butter and whisk until smooth.
Pour the wet ingredients into the dry ingredients. Fold gently with a spatula until just combined — a few small lumps are fine. Do not overmix.
Heat a non-stick skillet or griddle over medium heat. Brush lightly with a little of the remaining melted butter.
Pour about 1/4 cup of batter per pancake into the pan. Cook for 2-3 minutes until bubbles form on the surface and the edges look set.
Add a generous dollop of sour cream alongside the apples.
Finish with a slow drizzle of honey. Serve immediately.

Safety & Storage
High Risk Population
Children and elderly individuals should consume these pancakes while still warm; pancakes cooled to room temperature for extended periods present bacterial growth risk.
Storage
Refrigerate any leftover pancakes within 2 hours of cooking. Store in airtight container for up to 3 days. Reheat thoroughly before serving.
Cross Contamination
If preparing for individuals with milk or egg allergies, use dedicated equipment that has not contacted these allergens. Clean griddle and utensils thoroughly between uses.
Cooking Temperature
Cook pancakes until edges are fully set and center appears dry. Ensure griddle maintains consistent medium heat to avoid undercooking the egg and milk components.
Allergen Warning
This recipe contains milk and eggs. Buckwheat, while not a standard allergen, can cause reactions in those with cereal grain allergies or latex-fruit syndrome. Inform guests of all ingredients before serving.
Pro Tips
Technique
Fold the batter just until combined, even if a few lumps remain. Overworking develops gluten, and you will lose that tender, delicate crumb we are after. Patience with the spatula rewards the palate.
Substitution
If buckwheat feels too assertive for you, substitute half the buckwheat with all-purpose flour. The nutty character remains present while the texture becomes softer and more familiar.
From the chef
In Copenhagen, we do not rush mornings. Growing up above the bakery, Sundays meant starting slow and building something worth the time. These buckwheat pancakes follow the same philosophy I apply to my smørrebrød—each layer placed with intention. The buckwheat gives earthiness, the apple sweetness, the sour cream a quiet tang. Simplicity demands precision.
