- 3Bite-sized and puffy — round, soft and pillowy, not flat like crêpes
- 4Served warm, topped with a pat of butter and a heavy snow of powdered sugar
- 5Eaten as a sweet snack or treat, typically several to a portion

Technique
- Yeast fermentation of the batter
- The slow yeast rise gives poffertjes their light, airy, faintly sour character — baking powder versions are a shortcut, not the same
- Cooking in a dimpled poffertjespan
- The small rounded wells create the signature puffed, two-sided ball shape
- Flipping each well
- Turning each little pancake gives the even golden puff on both sides

Substitutions
Buckwheat-wheat blend → All wheat flouradmissible
Common and acceptable, though buckwheat is the traditional touch
Advocaat topping → Maple syrup or berriesadmissible
Topping is flexible
Yeast leavening → Baking powder onlyinadmissible
Loses the characteristic airy, faintly fermented texture that defines real poffertjes
Dimpled poffertjespan → Flat griddleinadmissible
Produces flat pancakes, not the puffed two-sided spheres
Common mistakes
- Using baking powder instead of yeast and losing the airy fermented texture
- Cooking on a flat pan so they come out as flat little pancakes
- Making them too large — they should be bite-sized
- Skipping the butter-and-icing-sugar finish
- Overworking the batter so they turn dense
