The raised, curling flap of crust that lifts away from a bread score during oven spring — the baker's signature of a well-executed slash.

The grigne (French: grin, grimace) is the thin, raised lip of crust that forms along one side of a bread score when the blade angle causes one edge of the cut to be undercut rather than bisected symmetrically. As oven spring drives the loaf outward from within, this undercut flap lifts away from the main crust surface and sets into a crisp, caramelized ridge that overhangs the open bloom. In professional and artisan bread culture the ear is the most legible proof of baker's skill: a pronounced, evenly developed ear signals correct lame angle, ideal proof, sufficient steam, and a well-structured dough.

How to cook it

  1. 1Tilt the lame to 15–20° off vertical — the blade should be nearly lying flat against the dough surface rather than pointing straight down
  2. 2Draw the blade toward you in a single, fluid stroke without pausing or lifting mid-cut; hesitation causes drag and a ragged edge that heals shut
  3. 3Aim for a cut depth of 6–8 mm; the undercut angle does the work, not the depth
  4. 4Load the scored loaf into a preheated Dutch oven or onto a stone with steam immediately; delay allows the cut to dry and seal
  5. 5Bake with steam (lidded Dutch oven or injected steam) for the first 15–20 minutes; this keeps the surface extensible while internal pressure builds
  6. 6Remove the lid or steam source for the final 15–20 minutes so the ear caramelizes and sets into its characteristic rigid curve

Prep & butchery

  • Ensure dough is adequately but not excessively proofed — the 'poke test' (dough springs back slowly but not sluggishly) is the standard check
  • Cold-retard shaped loaves in the refrigerator overnight; cold dough has a firmer skin that the blade undercuts more cleanly than warm, slack dough
  • Use a fresh blade — a used lame blade acquires micro-burrs that catch the dough skin and prevent the clean undercut needed for a pronounced ear

Substitutes

  • No ear / symmetrical bloom

    Achieved deliberately with a more vertical blade angle; some bakers prefer a wider symmetrical opening on high-hydration miche where a single ear can look thin and delicate

  • Scissor snip ear

    On small dinner rolls or epi baguettes, angled scissor cuts create a pseudo-ear effect without a lame

Why the angle is everything

When the lame is held nearly perpendicular to the dough, it bisects the surface symmetrically and both sides of the cut expand equally, yielding an open bloom with no flap. At 15–20° off vertical the blade passes under the skin on the blade-facing side, creating a thin flap that is physically detached from the dough mass below it. During oven spring that flap is pushed upward by the expanding interior and has no gluten network anchoring it down — it curls and rises, then sets rigid once the starch gelatinizes and the crust caramelizes.

Reading the ear as diagnostics

Experienced bakers read the ear the way physicians read an ECG. A very large, dramatic ear with a wide open crumb beneath it often indicates a slightly under-proofed loaf that had maximum oven spring energy. A small, barely-lifted ear with a coarser, more irregular crumb often indicates over-proofing with diminished spring. A torn, irregular ear where the crust ripped beyond the score indicates dough that was too warm and slack when scored, or a blade that dragged and failed to undercut cleanly.
