Cultured Butter

Tangy, lactic richness that turns bread and pastry into something worth remembering.
Cultured butter is made from cream that has been fermented with lactic-acid bacteria before churning, developing a complex, tangy flavour that sets it apart from sweet-cream butter. The fermentation produces diacetyl (butterscotch-adjacent), acetic acid (brightness), and a range of lactic esters that give the fat a yogurt-like depth. European-style cultured butters typically contain 82–84% fat vs the 80% floor of US sweet-cream butter, so they also carry richer mouthfeel. The tang is unmistakable on a warm baguette and transformative in laminated doughs, where the acidic backbone keeps layers distinct and flavourful.

Notes
Reading the label
True cultured butter lists 'lactic acid cultures' or 'crème maturée' in the ingredients. Many 'European-style' butters sold in the US are simply higher-fat sweet-cream butters — perfectly good, but without the fermentation complexity. French AOC butters (Isigny Sainte-Mère, Beurre de Bresse) are benchmarks for cultured character.
Temperature matters
Serve cultured butter at around 16–18 °C (60–65 °F) — cold enough to hold a smear, warm enough for the volatiles to reach the nose. Butter straight from the fridge mutes the tang and aroma completely.
