Ciabatta
Ciabatta · A high-hydration Italian bread with an open, irregular crumb and a thin, crackling crust. Its character comes from a batter-like dough that cannot be kneaded in the traditional sense—gluten development relies on stretch-and-fold techniques and a liquid preferment (poolish) that builds flavor and gas production. The result is a bread that is simultaneously chewy within and airy throughout.

The formula
Flour 100 : Water 80–85 : Olive oil 5–10 : Salt 2 : Yeast 0.5–1 (fresh)
The defining feature is 80%+ hydration. Most formulas include a poolish (equal parts flour and water by weight, fermented 12–16 h) built from 20–30% of the total flour. The poolish contributes wild yeast complexity and a more open crumb. Without it, the dough is harder to work with and the flavor is thinner.

Method
- 1Build poolish: combine 150 g bread flour, 150 g water (25 °C), and a pinch of yeast. It also firms the dough, making shaping easier despite the high hydration, and improves the final crumb structure.
- 5Turn cold dough onto a lightly floured surface. Do not deflate—handle gently. Pre-shape into a rough rectangle. Rest 10–15 min uncovered. Divide into 400–500 g pieces, shape into final rectangles or ovals.The long-cold dough is firm enough to handle; the rest allows gluten to relax so final shaping doesn't tear the delicate open structure. Minimal handling preserves the gas formed during fermentation.
- 6Place shaped loaves on cornmeal-dusted baking sheet or in floured bannetons. Cover and proof at room temperature 45–90 min until noticeably puffed. Score the surface with a razor blade at 45° angle.Room-temperature proofing rebuilds gas after cold storage. The 45° score allows maximum oven spring because the cut opens cleanly under CO₂ and steam pressure rather than tearing randomly. Cornmeal prevents sticking and adds texture to the crust base.

Techniques that matter
Poolish fermentation
A liquid preferment at 100% hydration, fermented to full maturity before incorporation. Adds wild yeast strains (Saccharomyces cerevisiae and S. exiguus from the flour and environment), lactic and acetic acid production, and dextrin formation that improves crumb softness and crust color.
Stretch-and-fold
Replaces traditional kneading for high-hydration doughs. Each stretch-and-fold set (4 folds × 4 rotations) provides equivalent structural development to ~2 minutes of kneading while incorporating air and maintaining the open structure that kneading would compress.
Cold retardation
Extending fermentation at 4–6 °C slows yeast CO₂ production significantly, allowing longer flavor development without over-fermentation. The cold also firms the hydration-weakened gluten, making shaping feasible.
Lamination (optional advanced step)
After bulk fermentation, dough can be 'laminated'—stretched flat, folded in thirds like a letter, and rested 10 min. This creates distinct layers and further develops gluten with less handling than repeated fold sets.
Steam baking
Water vapor at the bread surface keeps crust plastic and elastic during initial oven spring (the 'oven spring' phase, first 5–10 min), allowing maximum expansion. Without steam, the crust sets too quickly, limiting rise and producing a thick, hard crust.
Variations & derivatives
Ciabatta Rolls (Panini Rolls)Global
Same dough, scaled to 100–120 g portions, shaped into smaller rectangles. Baked 15–18 min. Excellent as sandwich rolls; their open crumb grips fillings while the crisp crust adds texture.
Rosemary CiabattaItaly
Fresh rosemary needles pressed into the surface before scoring. The herb's volatile oils perfume the crumb during baking. A classic pairing with olive oil for dipping.
Olives and Sun-Dried TomatoesMediterranean
Cured olives (Gaeta or Kalamata) and julienned sun-dried tomatoes folded into the dough during final shaping. The added salt from cured olives and concentrated sugar in sun-dried tomatoes accelerate local fermentation, creating irregular pockets around each addition.
Whole Wheat CiabattaModern Italian
Replace 20–30% of white flour with whole wheat flour. Whole wheat's bran fragments cut gluten networks (requiring slightly less hydration) but add nutty, malty notes. The result is denser with smaller holes but more complex flavor.

- Bread flour (13–14% protein) → All-purpose flour (10–12% protein) — At 80%+ hydration, all-purpose flour will produce a loaf that spreads rather than rises—gluten cannot contain the CO₂. - Poolish (liquid preferment) → Direct addition of 0.1% diastatic malt powder — Malt powder adds amylase enzymes that break starch into fermentable sugars, improving browning and providing food for yeast. - Extra-virgin olive oil → Vegetable oil or melted butter — Fat content and general softness are preserved, but the distinctive grassy, peppery EVOO flavor is lost. Butter adds dairy Maillard notes that EVOO does not. Either is acceptable in non-traditional applications where olive oil flavor would conflict.
- Fresh yeast → Instant dry yeast (divide by 3) — Instant dry is concentrated: 1 g fresh ≈ 0.3 g instant dry. No adjustment needed to the ratio. Fresh yeast's moisture content makes it slower to activate; instant yeast hydrates faster.
Troubleshooting
Dough is impossibly sticky and unworkable after mixing
Too much hydration for the flour's absorption capacity, OR flour was not properly incorporated during initial mixing → If the dough flows like batter, add flour 1 tablespoon at a time until workable—resist adding more than 30–50 g total, as excess flour makes the bread dense. If it's just sticky due to underdevelopment, perform 2 more stretch-and-fold sets before adjusting hydration. High hydration is not optional for true ciabatta—learn to work with wet dough using a bench scraper and wet hands, not additional flour.
Loaf spreads flat in the oven instead of rising
Underdeveloped gluten (insufficient stretch-and-fold), over-fermented dough that lost gas-holding capacity, OR oven temperature too low → Ensure at least 3–4 stretch-and-fold sets during bulk fermentation. Verify poolish is properly fermented (bubbly, domed) but not past its peak (collapsed, acidic). Bake at 230–250 °C initially; lower temperatures don't provide the oven spring needed to set the structure before spreading.
Dense, gummy crumb with no holes
Low hydration, degassed during shaping, OR insufficient fermentation → Check that hydration is truly 80%+. Do not deflate dough when turning out or shaping—handle it like a filled balloon. Cold retardation must be at least 12 h to develop flavor and crumb structure; 6 h is insufficient. If fermentation was rushed, expect compact results.
Thick, tough crust instead of thin and shattering
Insufficient steam during baking, oven too cool, or baked too long at low temperature → Use steam aggressively: pour 100–150 ml water onto oven floor and close quickly, or use steam-injection function. Steam for exactly the first 10 minutes, then vent. If crust is thick despite steam, the oven may be under-heated—ciabatta needs the direct radiant heat of 230–250 °C to create that characteristic thin shatter.
