crème légère · A classical French dessert cream made by folding whipped cream or Italian meringue (or both) into a vanilla crème pâtissière base. The result is an airy, thick‑enough‑to‑hold, flavour vehicle for tarts, entremets, and tubes.

The formula
1:1 custard base : cream (or ½ Italian meringue + ½ cream)
Scale to desired quantity. Classic base: 500 g whole milk, 4 egg yolks, 100 g sugar, 30 g flour or 20 g cornstarch, 1 vanilla bean. Fold in 200–250 g whipped cream (35 % fat). Texture should be thick enough to pipe; over‑folding collapses it.
Identity
- Enriched vanilla custard, not a sauce
- Air incorporated by folding, never by whisking over heat
- Base must be fully cooled (below 30 °C) before folding
- Must hold its shape at room temperature — not soupy
- Thickened primarily with egg‑yolk protein, not starch alone
Ingredients

Method
- 1Prepare crème pâtissière: scald milk with vanilla. Whisk yolks and sugar until pale. Whisk in flour/starch. Pour hot milk in slowly, then return to pan. Cook to 82–84 °C, stirring constantly.Full cooking denatures yolk proteins and activates starch (if used), giving a stable base that can hold its shape under the folded cream.
- 2Spread base thinly on a sheet pan. Cover with plastic wrap pressed to surface. Cool to below 30 °C.Preventing a skin and slowing cooling stops the base from tightening too much. Below 30 °C is critical — warmer cream will melt and deflate the whipped elements.
- 3Whip cream to medium‑stiff peaks (≈80 % volume increase). If using Italian meringue, prepare it now to 121 °C syrup on whites.Medium‑stiff peaks fold more easily than over‑whipped (grainy) cream. Italian meringue provides a drier, more heat‑stable structure.
- 4Transfer cooled base to a wide bowl. Add whipped cream (and/or meringue) in one addition. Fold with a rubber spatula using 2–3 turns, then 3–4 folds per batch.Folding (not stirring) incorporates air without deflating the whisked cream. Working quickly in few folds preserves maximum volume.
- 5Stop as soon as streaks disappear. The cream should hold its shape on a spoon but flow slowly — pipe or spoon immediately into desired vessel.Over‑folding breaks down the foam and produces a dense, flat cream. Crème légère is time‑sensitive; use it the moment it is ready.

Incorporates fragile air‑inflated structures without deflation — a non‑negotiable technique for every cream‑based dessert.
Pastry‑cream temperature control
Cooling quickly and covering the surface prevents skin formation and a tight gel that resists folding.
Meringue italienne
Provides heat stability for outdoor or warm‑service use; the syrup gels around air cells, protecting them.
Variations & derivatives
crème légère au caféFrance
Infuse coffee into the milk before making the base. Fold in 20 g strong espresso with the cream.
crème légère au chocolatFrance
Replace 60–100 g of milk with heavy cream in the base, and fold in 80 g melted dark chocolate (55 % cocoa) after the base cools.
crème diplomateFrance (modern)
Uses pastry cream + crème pâtissière base + gelatin + whipped cream. The gelatin gives a permanent set; used in layered entremets. Technically a different preparation.
crème mousselineBelgium/Northern France
Pastry cream beaten with butter (like a German buttercream). Not the same as crème légère; heavier and richer.

Substitutions

Troubleshooting
Cream deflates and becomes dense
Base was too warm when cream was folded, melting the fat cells; or over‑folding broke the foam structure. → Always cool base below 30 °C. Fold in 2–3 deliberate strokes, no more. Use immediately.
Grainy or curdled texture
Base was cooked above 85 °C, causing yolk proteins to curdle; or eggs were added to boiling liquid too quickly. → Cook to 82–84 °C, stirring constantly. If curdled, strain through a fine sieve while hot and use immediately.
Crème does not hold shape when piped
Not enough thickening in the base (undercooked custard) or insufficient whipping of the cream. → Ensure the base reaches 82–84 °C and thickens visibly. Whip cream to stiff, not soft, peaks before folding.
Weeping or liquid pooling at bottom of filled tart
Over‑folding or base temperature too high, causing the cream to break and release liquid. → Use immediately. If storing, keep refrigerated and accept some weeping is normal after 24 hours.
