Mirepoix

Mirepoix · The classical French aromatic base of diced onion, carrot, and celery, sweated slowly in butter or fat to extract their water content and develop a sweet, concentrated flavor foundation for stocks, sauces, braises, soups, and stews. It is the archetypal aromatic foundation upon which the majority of Western savory cooking is constructed.

The formula

2 : 1 : 1 (onion : carrot : celery, by weight)

500 g onion : 250 g carrot : 250 g celery. Ratio by volume is approximate; weight is precise. Classical French kitchens use this proportional relationship to scale all stocks and fonds. A standard benchmark is approximately 1 kg mirepoix per 1 L liquid for stocks.

Method

  1. 1Dice onion, carrot, and celery into uniform 5–8 mm pieces (small dice or brunoise). Keep pieces similar in size.Uniformity ensures all vegetables release water and sweat at the same rate. Oversized pieces will cook unevenly, and some will remain raw while others disintegrate.
  2. 2Heat butter (or fat) in a heavy-bottomed saucepan or stockpot over medium-low heat. Add all diced vegetables and a pinch of salt. Stir to coat thoroughly in fat.Fat acts as a heat-transfer medium and coats the vegetable cell surfaces, disrupting them gradually to release moisture. Salt draws water osmotically, accelerating the sweating process and preventing the vegetables from steaming in their own juice.
  3. 3Cover the pot and cook over low heat (80–100°C / 175–212°F) for 15–20 minutes, stirring occasionally, until vegetables are completely softened and translucent but not colored.Low-temperature sweating extracts moisture gently, concentrating flavor without browning. The Maillard reaction and caramelization are counterproductive here — mirepoix is a flavor base, not a color agent. Any browning produces bitter compounds that will overwhelm a delicate stock.
  4. 4If making a fond blanc (white stock), stop here and proceed. For a brown preparation (fond brun), continue cooking uncovered over slightly higher heat (140–160°C) for 5–10 minutes, stirring, until the vegetables take on a light golden color.Browning the mirepoix before adding bones or stock introduces caramelized, Maillard-reaction compounds that give brown stocks their deep, savory complexity. This step must be watched carefully — burnt mirepoix is ruined and will ruin everything it touches.

Techniques that matter

Sweating

A low-heat, covered-cooking technique that extracts moisture from vegetables gently, concentrating flavor without developing color. The fat and salt accelerate this process by disrupting cell structure.

Brunoise

The classical French knife cut — 2–3 mm cubes — ensures rapid, even cooking and a refined texture in final preparations where the mirepoix remains visible (as in consommé or refined sauces). For stock-making, a 5–8 mm dice is acceptable and faster.

Fond preparation

Mirepoix is the aromatic component of fonds (stocks). The classic French five-part stock system (fonds blanc, brun, de volaille, de poisson, fond lié) all begin with mirepoix, with the color of the stock determined by whether the mirepoix is sweated or browned.

Variations & derivatives

Holy TrinityLouisiana (Creole/Cajun cuisine)

Bell pepper joins onion and celery, yielding 1:1:1 onion : celery : bell pepper. More acidic and bright than French mirepoix; the bell pepper's water content is higher than carrot, so sweating takes longer. Foundation for gumbo, jambalaya, red beans and rice.

Soffritto (Italian)Italy

Uses onion, carrot, and celery (sometimes with garlic) but cut into larger pieces and cooked in olive oil over very low heat for 20–45 minutes until deeply softened and golden. Often includes pancetta or guanciale. The longer, colored cooking concentrates flavor differently — this is a cooked base, not a raw aromatic foundation like mirepoix.

Suppengrün / SuppengemüseGermany / Austria

A bouquet of whole parsley stems, leek, carrots, and celery tied together with string — used in stocks and soups. Diced versions exist but the bouquet form is more traditional, as vegetables are removed after infusing flavor.

KochgemüseGermany

Diced carrot, parsley root, celery, leek, and onion in varying proportions depending on regional tradition. Used as an aromatic base for sauces and soups. Often includes parsnip or kohlrabi.

Sofrito (Spanish and Latin American)Spain / Latin America

Spanish sofrito uses tomato, onion, garlic, and sometimes peppers cooked in olive oil until deeply concentrated and caramelized — it is a cooked sauce, not a raw base. Latin American versions (Puerto Rican, Dominican) follow a similar cooked-concentrate model. This is fundamentally different from raw mirepoix.

Mirepoix à la paysanneFrance

A larger-cut, more substantial version where the vegetables are diced 1–2 cm and cooked longer in butter and white wine, sometimes with lardons and mushrooms. It approaches a finished preparation (à la paysanne = farmhouse-style) rather than serving purely as a foundation.

MatignonFrance

A more refined aromatic base: mirepoix plus diced ham (jambon de Paris) or prosciutto, sometimes with mushroom trimmings, cooked in butter and moistened with white wine. Used as a lining for braisers and as a foundation for aristocratic braises and vol-au-vent preparations.

  • CarrotParsnipParsnip is sweeter and more starchy than carrot. Use 1:1, but the final flavor will be noticeably sweeter. Safe for stocks and braises.

Troubleshooting

Mirepoix browns or scorches during sweating

Heat is too high. Fat and vegetables in direct contact with high heat cause rapid caramelization and then burning. This happens quickly — the window between 'golden' and 'burnt' is narrow.Reduce heat immediately. If burning has begun, discard the batch — there is no recovery. Burnt mirepoix imparts acrid, bitter compounds that cannot be masked and will ruin a stock or sauce.

Mirepoix is watery and raw-tasting after cooking

Vegetables were not sweated long enough or heat was too low, causing steaming rather than sweating. The moisture did not evaporate and the aromatic compounds did not develop.Continue cooking uncovered over low-medium heat, stirring frequently, until the vegetables are soft and the pan appears dry between additions. This can take 5–10 additional minutes.

Final stock or sauce tastes flat and one-dimensional

Insufficient mirepoix relative to liquid volume, or mirepoix was added too late in the cooking process. Aromatics need time and proportion to infuse properly.Ensure approximately 1 kg mirepoix per 1 L liquid as a baseline. Add at the beginning of stock-making or sauce construction and allow adequate simmering time (30–60 minutes minimum for stocks) for full extraction.

Storage

Keeps 2–3 days refrigerated as prepared mirepoix; 3–4 months frozenStore in an airtight container. For freezing: spread diced mirepoix on a sheet pan in a single layer (individual quick-freeze), then transfer to a freezer bag. Portion by recipe quantity. Label with date. Reheat: Add directly to hot fat in the pot — no thawing needed. Frozen mirepoix can go directly into stock pots or sauté pans.
