mirror glaze

glaçage miroir · A pourable, glossy confectionery glaze of gelatin, syrup, condensed milk and often white chocolate that sets to a firm, cuttable, reflective surface on frozen or chilled desserts. It is not a lacquer or a candy coating — it bonds to the frozen surface through condensation and sets as a thin elastic skin that can be cleanly sliced without cracking. The glaze is opaque, streak-free and visually uniform, intended to elevate the appearance of entremets, mousse cakes and individual entremets.

The formula

1 : 1.5 : 1.5 : 1 water : sugar : glucose : condensed milk; 1.4% gelatin

Scale by total weight of liquid phase. For 1000 g glaze: 182 g water, 273 g sugar, 273 g glucose syrup, 182 g sweetened condensed milk, 14 g gelatin (powdered, 200 bloom). Sheet gelatin: 12 g per 500 g base (~24 sheets of 2 g each). White chocolate (100–150 g per 500 g base) is commonly added for smoothness and opacity; omit for a clearer, more brittle set. Apply at 35–40 °C to surfaces at −18 to −20 °C. Yields ~1 kg glaze, sufficient for 8–12 standard entremets (18 cm round).

Ingredients

Method

  1. 1Bloom gelatin in cold water (6× weight of gelatin) for 10–15 minutes until pliable and swollen.Hydrates the collagen without activating its setting power prematurely. Unbloomed gelatin forms lumps when added to hot syrup.
  2. 2Combine water, sugar and glucose syrup in a saucepan. Bring to 103–105 °C (219–221 °F), stirring only to dissolve.The elevated temperature concentrates the syrup to approximately 85% soluble solids, developing the correct viscosity for a pourable glaze. Below 103 °C → thin, pooling glaze; above 107 °C → risk of caramelization and excessive thickness.
  3. 3Remove from heat, add bloomed gelatin and stir until fully dissolved. Pour over white chocolate (if used) and condensed milk in a tall container.The hot syrup melts gelatin and chocolate simultaneously. Adding condensed milk to the hot mixture rather than the reverse prevents lumping and ensures a smooth emulsion.
  4. 4Emulsify with an immersion blender in short bursts, keeping the blade fully submerged to avoid air incorporation. Strain through a fine-mesh sieve.Air bubbles create a grainy, matte surface on the finished glaze. Blending at 40–45 °C ensures the gelatin remains fluid and the chocolate fully incorporated. Straining removes undissolved gelatin fragments and any unmelted chocolate.
  5. 5Cool to 35–40 °C, add fat-soluble color paste, blend briefly. The dessert surface must be fully frozen at −18 to −20 °C before pouring.35–40 °C is fluid enough to pour smoothly yet warm enough to melt the outer millimeter of ice, creating a bond through condensation. Too hot soaks in; too cold sets before spreading and yields uneven coverage. Fully frozen surfaces prevent pooling at the base.
  6. 6Pour glaze in one steady motion from the center of the frozen dessert. Let excess drip off naturally; do not touch or spread.A single continuous pour prevents seams and air pockets. Touching disrupts the setting skin and creates finger marks or dull patches.

The gelatin forms a thermoreversible protein matrix that sets firm at refrigerator temperature (4–6 °C) yet remains elastic enough to cut cleanly. The set is strong enough to support the weight of the dessert without deforming but thin enough to be translucent at the edges.

White chocolate and condensed milk are oil-in-water emulsions dispersed in the sugar syrup. The immersion blender breaks the chocolate into droplets stabilized by lecithin and the milk proteins, preventing separation during storage.

When hot glaze meets a −20 °C surface, the extreme temperature differential creates immediate condensation at the interface, causing the glaze to 'weld' to the surface as water vapor condenses. This mechanical bond eliminates the need for an intermediate coating like warm jam.

Unlike a sauce, the recipe ratio is secondary to temperature control. A glaze made within the standard ratio will fail if poured outside 30–45 °C; 35–40 °C is the professional working window for most environments.

Opaque white base mixed with concentrated oil-based or alcohol-based color pastes for vibrancy. Gelée-based versions use higher gelatin (10–12 g per 500 g) for a firm, sliceable top layer rather than a pourable glaze.

Not a mirror glaze but a related finish: a cocoa butter and alcohol spray applied with an airbrush or spray gun to create a velvety micro-texture rather than a glossy surface. Both are structural finishes for the same dessert family.

pâte à bombe glazeFrance

Uses a法制ed Italian meringue (pâte à bombe) as the base instead of condensed milk, producing a lighter, more aerated set. More technically demanding; used for specialty mousses.

Troubleshooting

Glaze is too thick to pour; pools in lumps

Application temperature too low (below 30 °C) or gelatin ratio too high. Syrup may have been cooked above 107 °C.Reheat gently in a bain-marie to 40 °C, stirring. If the batch is irreversibly thick, remix with a small amount of warm water (10–20 g) to adjust consistency. Do not exceed 45 °C or the gelatin begins to degrade.

Streaks, uneven coverage or visible patches

Glaze applied too hot (> 45 °C) so it soaks into the dessert surface, or the dessert was not fully frozen (warm spots cause differential absorption). Also caused by insufficient emulsification.The dessert must be at −18 to −20 °C throughout. Re-freeze if necessary. For streaking caused by partial setting during application, a second thin pour at correct temperature can rescue the surface, but the underlying layer must still be fluid.

Matte, grainy or bubbly surface

Air incorporated during blending. Also occurs when glaze is held at working temperature too long before use — the surface oxidizes and the gelatin begins to set unevenly.Always use a tall container and immersion blender with the blade fully submerged. Strain before use. Use glaze within 30 minutes of reaching 35–40 °C; do not hold at working temperature for more than 1 hour.

Glaze tears or cracks when cut

Gelatin ratio too high (over-set) or the dessert was held at refrigerator temperature too long before cutting, causing the glaze to become over-firm and brittle.Cut entremets directly from the freezer or after no more than 5 minutes at refrigerator temperature. For a softer cut, reduce gelatin by 10–15% or use sheet gelatin of lower bloom grade for part of the total.

Storage

Keeps 3–5 days refrigerated (4 °C) in an airtight container; 2–3 months frozen (−18 °C)Store in a sealed container with a disc of parchment pressed directly onto the surface to prevent skin formation. For frozen storage, portion into blocks; thaw overnight in refrigerator before re-use. Reheat: Reheat in bain-marie to 40 °C, stirring gently.
