Garum

A fermented fish or meat condiment produced by enzymatic and microbial autolysis under salt — the defining umami seasoning of ancient Rome and a foundational technique in contemporary fermentation-forward cuisine.
/GAH-room/Latin garum, from Greek garos (γάρος), a fish brine or sauce; the Greek term appears in texts predating Roman usage, possibly from an Aegean root. The equivalent Roman term liquamen (from liquare, to liquefy) was used interchangeably or to describe a higher-grade product by some scholars.
Definition
Garum is a fermented liquid condiment produced by combining whole small fish (or fish offal, blood, and entrails) with salt at a ratio historically documented at approximately 1 part salt to 2–8 parts fish by weight, then allowing autolytic and microbial enzyme activity to liquefy the proteins over weeks to months in the sun or in heated chambers. The result — strained and clarified — is a translucent, deeply savory amber to dark-brown liquid of extraordinary umami concentration, analogous to modern Southeast Asian fish sauces (nam pla, prahok, bagoong) but understood by the Romans as a distinct and highly valued product. Ancient Roman garum production was an industrial operation: the social historian historians Pliny the Elder, Apicius, and Martial all describe garum sociorum (the 'garum of allies,' made from mackerel at Carthagena) as the most prized grade, expensive enough to rival perfume. Its importance in Roman cuisine is equivalent to soy sauce in Chinese cooking or nam pla in Thai cooking — a backbone seasoning used in nearly every dish in Apicius's De Re Coquinaria. In contemporary fine-dining, the term garum has been revived and dramatically expanded by the Noma fermentation lab. Modern garum encompasses koji-assisted enzymatic fermentation of virtually any protein substrate: beef garum, grasshopper garum, mushroom garum, and even lacto-fermented nut garums. Koji enzymes (amylases, proteases) accelerate the breakdown that classical garum achieved through autolysis and salt-tolerant halophilic bacteria alone, allowing the modern kitchen to produce complex, shelf-stable umami liquids in weeks rather than months, and from substrates that could not ferment safely at the traditional salt concentrations.

Roman grades and production
Ancient sources distinguish several grades: garum sociorum (the prestige mackerel product from Baetica, modern Andalusia), liquamen (a general-purpose lower-grade liquid), and allec (the paste residue left after straining, analogous to modern prahok or bagoong). Salt ratios varied by grade and intended use: the highest grades used proportionally more salt and longer fermentation. Archaeological evidence — including intact amphorae at Pompeii and factories at Baelo Claudia in Spain — confirms production on an industrial scale with large stone vats (cetariae) partially open to the sun for heat-assisted fermentation.
Modern koji-assisted garum
The Noma method for beef garum combines meat scraps, koji rice, and salt (roughly 18 % of total weight) and incubates the mixture in a sealed vessel at 60 °C for 8–12 weeks. The elevated temperature both accelerates enzymatic activity and keeps the environment above the growth range for most pathogens, making the process safer than ambient fermentation at lower salt concentrations. The resulting liquid is strained, clarified, and used in drops as a concentrated seasoning. This method has been applied to chicken wings, egg yolks, mushrooms, and even miso, expanding the classical fish-only scope into a universal protein-fermentation technique.
Parallel traditions worldwide
Garum is not uniquely Roman — fermented fish sauces appear independently across many cultures: Thai nam pla and pla ra, Vietnamese nuoc mam, Filipino patis, Korean aekjeot, Cambodian tuk trey, Burmese ngapi, and Japanese shottsuru (made from sandfish). The parallel evolution of these products reflects both the abundance of small fatty fish in coastal communities and the near-universal human preference for umami-rich liquid seasonings.
