Method
Toast hazelnuts in a dry skillet over medium heat, stirring constantly, for 4-5 minutes until golden and fragrant. Transfer to a clean kitchen towel and rub vigorously to remove skins. Let cool completely.
Brew espresso at full strength and pour into a shallow container. Refrigerate until chilled, about 20 minutes.
Combine cooled espresso, vanilla extract, and white sugar in a blender. Blend on medium until sugar dissolves fully, about 30 seconds.
Add toasted hazelnuts to the blender. Blend on high for 2 minutes until nuts are finely ground and mixture is smooth.
Pour hazelnut-espresso mixture through a fine mesh strainer into a large bowl. Press firmly to extract as much liquid as possible; discard grounds.
Whip heavy cream to soft peaks using a stand mixer or hand mixer, about 2-3 minutes. The cream should hold its shape but remain glossy.
Fold whipped cream gently into the strained espresso mixture in thirds, using a rubber spatula. Stop folding when just combined — streaks are acceptable.
Cover and freeze the mixture for 30 minutes to allow flavors to meld and texture to firm slightly.
Remove from freezer and whisk vigorously to break up any ice crystals. Return to freezer for an additional 20 minutes until scoopable.
Spoon into chilled glass cups or martini glasses. Garnish with 2-3 whole toasted hazelnuts and a light drizzle of white sugar syrup if desired. Serve immediately.

Handling
Toast hazelnuts over medium heat, stirring constantly. Remove immediately when golden and fragrant to prevent burning and acrid notes.
Use oven mitts when handling the skillet during hazelnut toasting and when working with chilled glass cups.
Cooking Temperature
Ensure espresso is fully chilled (refrigerated 20+ minutes) before blending with spirits to maintain proper consistency.
Cross Contamination
Thoroughly clean the blender and fine mesh strainer between uses. If serving to allergen-sensitive guests, consider dedicated equipment to prevent trace nut contamination.
Storage
The final mixture is only semi-frozen (30 minutes initial, 20 minutes secondary). Serve immediately after the final freeze. Do not leave at room temperature for more than 15 minutes.
High Risk Population
This cocktail contains vodka (alcohol) and dairy. Not suitable for children, pregnant individuals, or those with alcohol restrictions. Contains tree nuts and milk - avoid if severe allergies or lactose intolerance.
Allergen Warning
Clearly label this recipe as containing hazelnuts (tree nuts) and milk products. The toasted hazelnuts are blended into the mixture, making allergen removal impossible.
Equipment Safety
When whipping cream to soft peaks, secure the mixer bowl and do not over-whip. Stop at glossy soft peaks - over-whipping creates butter and ruins texture.
Pro Tips
Technique
When toasting your hazelnuts, listen carefully—once you hear that gentle crackle and catch the aroma, you're 30 seconds from perfection. Pull them off the heat immediately and rub them in a towel while they're still hot; this step removes the bitter skins that would otherwise muddy your cream's clean flavor.
Equipment
Chill your serving glasses in the freezer for at least 15 minutes before serving. The contrast between the frozen glass and the silky, semi-frozen mixture creates that ideal temperature experience where the drink flows just thick enough to coat the palate.
From the chef
The Hazelnut Espresso Sgroppino takes the classic Venetian frozen cocktail and rebuilds it around two of my favorite flavors: the clean bitterness of a well-pulled espresso shot and the warm, toasty depth of hazelnuts roasted until golden. You blend the nuts into the espresso base so their oils fully infuse the liquid, then fold in freshly whipped cream for a texture that is airy but substantial. Vodka keeps it lively without fighting the coffee. The result lands somewhere between a dessert and a digestif — complex enough to command attention, cold enough to refresh. Serve it the moment it sets, before the ice crystals take over.
