Creaming beats softened butter and sugar together until pale and aerated, whipping in the tiny air pockets that give cakes and cookies their rise and tender crumb. Have the butter at cool room temperature and beat several minutes — the lightness is the whole point.

Creaming beats softened butter and sugar together until pale, light, and fluffy — and in doing so whips tiny air pockets into the fat. Those air pockets are the leavening foundation of countless cakes and cookies: in the oven they expand and, together with chemical leaveners, give a tender, well-risen crumb. The sugar's sharp crystals do the work, cutting into the butter and trapping air as you beat. The two non-negotiables are butter at the right temperature — cool room temperature, soft but not greasy — and enough beating time, usually several minutes, to fully aerate.

How to do it

    Soften the butter

    Bring butter to cool room temperature — soft enough to dent but not oily or melting.

    Add the sugar

    Beat the butter alone briefly to loosen, then add the sugar.

    Beat until pale

    Cream on medium speed for several minutes until the mixture turns pale, light, and noticeably fluffy.

    Scrape the bowl

    Stop to scrape down the sides and bottom so everything aerates evenly.

    Add eggs gradually

    Beat in eggs one at a time, fully incorporating each, to keep the emulsion from curdling.

    Fold in dry gently

    Add the flour mixture last and mix just until combined to keep the aeration intact.

The science

Creaming is mechanical aeration: the sharp edges of sugar crystals slice into the soft butter and drag in air, creating a network of tiny bubbles held in the fat. When the batter bakes, those bubbles expand with heat and gas from baking powder or soda, lifting and tenderizing the crumb. Temperature is critical — melted butter can't hold air, and cold butter is too hard to aerate. Cool, pliable butter holds the most air.

Common mistakes

Creaming is easy to undercut.

  • Butter too warm or melted, which can't trap air and gives a dense, greasy result.
  • Under-creaming, stopping before the mixture is truly pale and fluffy.
  • Adding eggs too fast or cold, curdling the batter and losing aeration.
  • Over-mixing once the flour is in, developing gluten and toughening the crumb.

Tips & pitfalls

  • Don't rush the butter to softness in the microwave — partly melted butter ruins aeration.
