Fining / Clarification
Removing haze and suspended particles from liquids to leave them clear.
Fining clarifies wine, beer, stock, or juice by introducing an agent (such as egg white, gelatin, isinglass, or bentonite) that binds suspended particles and settles them out. The clarified liquid is then racked or strained off the sediment. It improves clarity and stability without heavy filtering, and the choice of fining agent affects mouthfeel and dietary suitability.
Clarification — or fining, the term more common in wine and beer work — is the disciplined removal of suspended solids from a liquid so that what remains reads as transparent to the eye and stable on the shelf. The mechanic is deceptively simple: a fining agent is introduced that either coagulates around particles (as egg white, gelatin, or isinglass do with proteins and tannins) or adsorbs them onto a charged surface (as bentonite clay or activated carbon do), and the resulting mass is then allowed to settle, rise as a raft, or be filtered out. The cook's task is to match the agent to the impurity, dose it correctly, and respect the temperature and timing it needs to do its work.
In the classical kitchen, clarification usually means the consommé raft — a disk of coagulated protein, meat, and aromatics that floats on a stock and filters the liquid as it bubbles up through it. In the cellar or brewery, it means choosing among a small pharmacy of fining agents (albumin, gelatin, bentonite, casein, isinglass, PVPP, carbon, carrageenan) and bench-testing each batch, because every vintage, brew, or pressing carries a different load of proteins, tannins, and pigments. Both worlds share the same trade-off: clarity costs volume — typically 5–15% of the liquid is lost to sediment, raft, or filter pad — and the cook who forgets this has under-stocked the pot.

How to do it

Build the raft mixture
In a large, wide pot, combine cold, well-flavored stock (skimmed of fat) with ground lean meat (beef, chicken, or veal, depending on the consommé), egg whites, finely diced mirepoix (onion, carrot, celery), and a sachet of herbs and peppercorns. Stir thoroughly so the whites coat the solids — this is what traps the impurities.

Bring up slowly
Place over very low heat. Bring to barely a simmer over 30–40 minutes, stirring gently from the bottom occasionally to prevent scorching. The mixture will look cloudy and then suddenly coalesce as proteins coagulate.

Let the raft set
Stop stirring. A solid mass of protein, meat, and vegetables will rise to the surface, forming the raft. Reduce heat to a gentle simmer (do not boil).

Pierce the raft
Use a ladle or skewer to poke 4–6 holes through the raft down into the liquid below. The consommé will bubble up through these vents, filtering through the raft as it does.

Simmer gently
Maintain a bare simmer for 90–120 minutes. Do not stir. Adjust heat so the liquid barely moves; aggressive bubbling breaks the raft and clouds the consommé.

Strain and degrease
Ladle the clear liquid through a chinois lined with several layers of damp cheesecloth. For perfectly clear results, do not press the raft. Chill quickly, then lift off the solidified fat layer.

Taste and adjust salt. Serve hot as a clear soup, or use as a base for delicate sauces and aspics.
Choosing the right fining agent
Selection is driven by what you need to remove. Match the impurity to the surface chemistry of the agent, then bench-test on a small sample, because the load of protein, tannin, and pigment varies from batch to batch.
- Proteins and protein haze: bentonite, albumin (egg white), isinglass, carrageenan.
- Tannins, phenolics, and astringency: gelatin, PVPP, casein.
- Color and taint (browning, oxidation, smoke, moldy corks): activated carbon, casein.
- Plant-based and vegan menus: bentonite, activated carbon, Sparkalloid, pea protein, or potato protein — these are increasingly capable across both wine and beer.
Kitchen clarification vs. cellar fining
The two traditions use the same word for related but mechanically different work. A consommé raft is a physical trap — the liquid is forced through a coagulated mass of protein and vegetable matter, and particles are caught in transit. Beverage fining is chemical — an agent binds specific molecules in suspension, and the bound complex settles, floats, or is filtered. The raft method clarifies whatever is in the pot; beverage fining is targeted, and a wrong agent can strip a wine of body or a juice of its character.
- Raft: works on any well-flavored stock; do not expect it to concentrate flavor.
- Cellar fining: bench-test on 100–200 mL first; record dose, time, and result before scaling.
- Both methods cost volume — plan to start with 10–20% more liquid than the finished yield you need.

Tips & pitfalls
- Always start with a well-seasoned, full-flavored stock; clarification does not concentrate flavor, so under-seasoned input yields a thin consommé.
- For a raft, mix the meat, whites, and aromatics thoroughly into COLD stock and bring up slowly — a fast boil breaks the raft and re-cloudes the liquid.
- Once the raft has set, do not stir. Pierce a few holes and let the liquid bubble up through them on its own.
- Skim fat from the surface only after cooking; skimming earlier disturbs raft formation.
- Bentonite must be fully hydrated (swelled) in water 24 hours before use, or it will not disperse.
- Isinglass should never be boiled — high heat destroys its clarifying power; add at cool-down.
- Gelatin fining works poorly on liquids low in tannins (most white wines, juice from non-grape fruit); choose bentonite or casein instead.
- Use food-grade fining agents only; brewing- and winemaking-grade products are formulated and dosed for consumption.
- Vegan-friendly alternatives exist (bentonite, activated carbon, Sparkalloid, pea protein) — choose them when serving plant-based menus.
- Always bench-test fining on a small sample before treating a full batch; protein and tannin levels vary.
