A microwave heats food from within by bombarding it with microwave radiation that makes its water (and fat and sugar) molecules vibrate, generating heat directly inside the food rather than conducting it in from a hot surface. That makes it unmatched for speed and convenience — steaming vegetables, melting butter and chocolate, softening, defrosting, and reheating — with no added fat and almost no cleanup. Why microwaves heat unevenly
Microwaves are tuned to a frequency that excites water molecules, which then transfer that energy as heat to everything around them. But the waves form a standing-wave pattern of peaks and nulls inside the oven (the turntable exists to move food through them), and they only penetrate roughly 1–2 cm before being absorbed — so the outside heats faster than a thick center. Ice also absorbs microwave energy poorly, which is why defrosting can cook the edges while the middle stays frozen. Covering, stirring, rotating, and a rest period all exist to smooth out these built-in hot and cold spots.
