Microwave

Heat food fast from the inside with microwave energy

Microwaving heats food by exciting its water molecules, cooking and reheating quickly with no added fat. It's handy for steaming vegetables, melting, and fast reheats. Cover loosely to trap steam and stir or rotate partway through, since microwaves heat unevenly.

A microwave heats food from within by bombarding it with microwave radiation that makes its water (and fat and sugar) molecules vibrate, generating heat directly inside the food rather than conducting it in from a hot surface. That makes it unmatched for speed and convenience — steaming vegetables, melting butter and chocolate, softening, defrosting, and reheating — with no added fat and almost no cleanup. Its weakness is unevenness: microwaves penetrate only an inch or so and create hot and cold spots, which is why covering, stirring, rotating, and resting are the small habits that turn a so-so reheat into an even one.

How to do it

    Use a safe container

    Choose microwave-safe glass or ceramic — never metal or foil, which sparks and can damage the oven.

    Cover loosely

    Cover with a vented lid or damp paper towel to trap steam and prevent splatter, leaving a gap for steam to escape.

    Heat in intervals

    Use shorter bursts (and lower power for delicate things) rather than one long blast, to avoid hot spots and overshooting.

    Stir or rotate

    Pause to stir or turn the food partway through so the heat evens out across the cold spots microwaves leave.

    Rest before serving

    Let it sit a moment after heating — the temperature evens out as heat conducts from hot spots to cool ones.

Why microwaves heat unevenly

Microwaves are tuned to a frequency that excites water molecules, which then transfer that energy as heat to everything around them. But the waves form a standing-wave pattern of peaks and nulls inside the oven (the turntable exists to move food through them), and they only penetrate roughly 1–2 cm before being absorbed — so the outside heats faster than a thick center. Ice also absorbs microwave energy poorly, which is why defrosting can cook the edges while the middle stays frozen. Covering, stirring, rotating, and a rest period all exist to smooth out these built-in hot and cold spots.

Tips & pitfalls
